Cheesy Potato Casserole



From the book "Being Dead is No Excuse; The Official Southern Ladies Guide to Hosting the Perfect Funeral" by Gayden Metcalfe and Charoltte Hays.  It is a hilarious book with great stories and fantastic southern recipes.

This is a great potato casserole. It is not for those people on a diet!


Liketa Died Potatoes (or Methodist Party Potatoes)

1 two-pound package hash browns (I use shredded not chunks)
10 oz grated sharp cheddar cheese
1/2 cup chopped onion
1 pint sour cream
1 can cheddar cheese soup
1 tsp salt
2 tsp pepper
2 cups cornflakes, crushed
1 stick butter

Preheat oven to 350. Combine hashbrowns, onion, sour cream, cheese, soup, salt and pepper. Put in greased 9x13 dish. Top with crushed cornflakes and dot with butter. Bake for 40 minutes or until golden crisp and bubbly.

  1. I love these! Around my neck of the woods we call them funeral potatoes. And I top mine with crushed croutons, since I almost never have cornflakes around.

  2. Love these. They are always a crowd pleaser. I've got some in the oven right now for my church lunch. Its a Baptist church, so I guess I'll have to come up with a new name for them ;-)
