Brined Chicken with White Sauce


I recently purchased Big Bob Gibson's BBQ Book. I found several recipes that I wanted to try. I decided to try the Brined Chicken with White Sauce (page 128) first. It was simple to put together and the chicken turned out really flavorful and juicy. I used a jar of the pre-made Big Bog Gibson White BBQ Sauce. We really liked this chicken. I ate the whole chicken breast (which is unusual). I made extra to use in my enchiladas tomorrow night.




Brine

1 cup apple juice
1 cup water
1 Tbs salt
1/4 Tbs garlic powder
1 Tbs honey
1/2 Tbs dark brown sugar
1/2 Tbs soy sauce
1/2 Tbs lemon juice
8 boneless chicken breasts
Big Bob Gibson BBQ White Sauce

In a medium bowl, combine the brine ingredients and mix well. Add the chicken breasts, making sure they are completely covered. Cover the bowl and refrigerate for 1 hour. Grill chicken until done. Submerge each chicken breast into a bowl of Big Bob Gibson's White BBQ sauce. Remove from sauce and serve.
