How to Make Chicken Taquitos in the Oven

This recipe is super easy to make with only a few simple ingredients. In a large bowl, stir together chopped chicken, cream cheese, salsa, lime juice, cilantro, taco seasoning, and shredded cheese.

Wrap corn tortillas in wet paper towels and microwave until pliable. Place 2-3 tablespoons of the chicken mixture on the lower third of a tortilla. Roll it up as tight as you can.

Place the taquitos seam-side down on the baking sheet topped with a wire rack. Spray with cooking spray and sprinkle with kosher salt.

Bake in a preheated oven until crispy.

Chicken Taquitos Recipe – Packed with savory shredded chicken, Mexican spices, cheese, and wrapped in crispy corn tortillas, they're a flavor-packed delight for any occasion. Plus, they're baked to crispy perfection for a healthier twist on the classic favorite.

Ingredients:

  • 4 -oz cream cheese softened
  • ¼ cup salsa
  • 1 Tbsp lime juice
  • 2 Tbsp taco seasoning
  • 3 Tbsp chopped cilantro optional
  • cups cooked shredded chicken
  • cups shredded pepper jack cheese
  • 18 small corn tortillas
  • kosher salt
  • cooking spray

Instructions:

  • Preheat oven to 425ºF. Line a baking sheet with foil and top with a wire rack.
  • Combine cream cheese, green salsa, lime juice, cumin, chili powder, onion powder, minced garlic, cilantro, chicken and shredded cheese.
  • Wrap tortillas in a damp paper towel and microwave 30-60 seconds, until warm and pliable.
  • Place 2-3 tablespoons of chicken mixture on the lower third of a tortilla. Roll it up as tight as you can.
  • Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet. Spray the tops lightly with cooking spray and sprinkle some kosher salt on top.
  • Bake for 15-20 minutes or until crisp and the ends start to get golden brown.
