This recipe has been on my “to make” list for some time.  I wanted to make it during the holidays, but I never got around to it.  I can’t believe I waited so long to try and make caramel corn – it is SO easy and SO good!  The cinnamon was a nice touch – makes you feel all warm and toasty inside; which is good because it is 26 degrees outside!  Whip up a batch today and eat it while you watch one of your favorite movies this weekend!  Be careful – this stuff is addictive.  We are calling it “popcorn crack”.

ingredients:

  • 12 cups popped popcorn (about ½ C kernels or 2 bags of microwave popcorn)
  • 1 cup pecan halves, roughly chopped
  • 1 cup brown sugar
  • ¾ tsp cinnamon
  • ¼ cup karo syrup
  • 1 stick butter, chopped
  • 1 tsp vanilla
  • ½ tsp baking soda

instructions:

  1. Preheat oven to 250ºF.  Line a jelly roll pan with foil and set aside.
  2. Place popped popcorn and chopped pecans in a large bowl. Set aside.
  3. Place brown sugar, cinnamon, syrup and butter in a large microwave safe bowl. Microwave on high for 30 seconds and then stir to combine. Return to microwave and heat for 2 minutes. Remove and stir and then microwave for 2 minutes more.
  4. Remove from microwave, stir in vanilla and baking soda. Mixture will foam and rise. Pour caramel mixture over popcorn and pecans and stir well until popcorn is well coated.
  5. Spread popcorn mixture onto a foil-lined jelly roll pan. Place in oven and bake for 30 minutes, stirring every 10 minutes.

  3. oh my gosh, i love homemade caramel corn! we make a lot of homemade kettle corn in our house and i've tried caramel corn before, but never with cinnamon and pecans! must make this soon!! 🙂
