Spicy Black Beans
We (by “we” I mean Chicken Legs) braved the cold and grilled fajitas this past weekend.  We went all out and had steak and chicken.  We marinated the flank steak and chicken in Lawry’s Mesquite marinade for two days.   The meat was SO good – the mesquite marinade gave it a nice smoky flavor and it had a nice hint of lime.  It was really the perfect Tex-Mex Flavor.  We like the mesquite marinade because it has the smokiness without having to add wood chips to our grill – we don’t have a fancy grill, so this works great for us!
I made some spicy black beans to go with the fajitas.  It is a simple dish, but it packs tons of great flavor. It is a good side dish or you can add them to your fajita like Chicken Legs did.





Spicy Black Beans
(Printable Recipe)

1 can black beans
1 can Rotel tomatoes (I used Original heat)
2 tsp chili powder
1 tsp lime juice

Combine all ingredients in a medium sauce pan and stir to combine.  Simmer for 15-20 minutes.

  2. Loved it. We made it with the seasoned beans because I just now read your reply. Wasn't sure if you drained your beans or not, so I assumed you did and it worked out.

    The boys had tacos but Alexis and I used these beans, brown rice & cheese to make some bean and rice burritos. They were excellent.

    I have about 1/2 cup left over for lunch at work tomorrow.

    I like the easy bean recipe too. Were they plain black beans or Bushes seasoned ones? I really wish I had some Rotel right now, the beans would be a great lunch for me.
