We braved the cold this past weekend and grilled up some fabulous chicken. We have really been into lemon lately, and this chicken is no different. It is marinated in olive oil and lemon juice and seasoned with Greek flavors. We let the chicken marinate in the fridge overnight. This chicken was juicy and extremely flavorful. It had a nice tanginess from the lemon juice. We served it with some rice and lima beans (not sure how Greek that is, but oh well). This was a simple dinner that really hit the spot on a cold and wet Saturday night.
- 2 boneless skinless chicken breast
- 6 Tbsp oil
- 6 Tbsp lemon juice
- 1 ½ tsp kosher salt
- ½ tsp oregano
- 2 ½ tsp Greek Rub
- ½ tsp garlic powder
- ¼ tsp paprika
Pound the chicken breast to an even thickness and place in a gallon zip-lock bag. Combine remaining ingredients and pour over chicken. Marinate in the refrigerator for at least 4 hours or overnight. Remove chicken from refrigerator about 30 minutes before cooking. Grill over high heat approximately 5 minutes on each side.
What, no tzasiki (sp?) sauce? ha ha
Seriously, that chicken sounds wonderful and the photo looks excellent. Ima gonna have to try this one soon. I like greek flavors.

Your grilled grrek lemon chicken looks really good. A perfect weeknight supper. Fresh lemon juice is such an awesome marinade flavoring.
btw, congratulations on winning the national championship! Although, we are a die hard Gator family, we were rooting for Alabama in the championshp.
Sounds and looks YUMMY, Steph… Those limas look good also.. Both hubby and I love Limas –but so many people don't like them.
