This Chicken and Sausage Jambalaya recipe is a favorite at our house. It is effortless to make and has tons of great cajun flavor! Chicken, smoked sausage, diced tomatoes, tomato sauce, chicken broth, cajun seasonings, and rice. This easy dish is a must for any upcoming Mardi Gras celebrations or a quick and easy weeknight meal. Whip up some cornbread and you are set!

How to Make Chicken and Sausage Jambalaya

This dish is super easy to make on the stove top with only a few simple ingredients. In a large dutch oven, heat oil over medium-high heat. Add chicken and sausage. Cook until the chicken is no longer pink. Add long grain rice, dried minced onion flakes, dried parsley, beef bouillon, dried thyme, garlic powder, cayenne pepper, salt, and black pepper. Stir in water or chicken broth, diced tomatoes, and tomato sauce. Bring the mixture to a boil. Reduce heat to medium and simmer until the rice is tender.

Helpful Tips & Frequently Asked Questions

  • Can use smoked sausage, andouille sausage. kielbasa sausage, tasso ham, or smoked turkey sausage.
  • You can use any boneless skinless chicken you would like. Chicken breasts, chicken thighs, or chicken tenderloins all work great.
  • Feel free to add shrimp to the recipe. Add the shrimp during the last 10 to 15 minutes of cooking time.
  • Can use water or low-sodium/no-salt chicken broth.
  • Feel free to add vegetables to the pot. Onions, celery, and green bell pepper (holy trinity) are common additions.
  • Can substitute cajun seasoning for parsley, garlic powder, cayenne pepper, salt, and black pepper.
  • This recipe is formulated for long grain rice
    • Brown rice and white rice are not equal substitutes. Brown rice requires more liquid and takes longer to cook.
    • I have not made this recipe with brown rice, so I can not say how to modify the recipe.
  • Store leftovers in an airtight container in the refrigerator.

Ingredients:

  • ½ lb smoked sausage cut into 1/4-inch slices
  • 1 lb boneless chicken breast or tenderloins
  • 1 Tbsp oil
  • cups low-sodium chicken broth or water
  • 1 (14-oz) can diced tomatoes undrained
  • 1 (8-oz) can tomato sauce
  • 1 cup long-grain rice
  • 3 Tbsp dried minced onion
  • 1 Tbsp dried parsley flakes
  • 1 Tbsp beef bouillon granules
  • ½ tsp dried thyme leaves
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper, or to taste
  • salt and black pepper, to taste

Instructions:

  • In a Dutch oven, heat oil and add chicken and smoked sausage.  Cook over medium-high heat until the chicken is no longer pink.  
  • Add remaining ingredients. Bring mixture to a boil over medium-high.
  • Cover, reduce heat and let simmer for 20-25 minutes, until the rice is tender.

  1. I didn’t have beef bouillon so I used a package of onion soup mix and added extra water so I could double the rice. I also added frozen onion and peppers. I also used your Cajun seasoning recipe. Big hit.

    I see you're doing the TPC in May. Have a blast, we went every year when we lived there. While the 17th hole gets all the TV time, the 11th and 18th were my favorites as a spectator.

    If you are staying in St. Augustine, try to go to Gypsy Cab Company for dinner. It was one of our favorites back then.
