Scalloped Corn Casserole – super easy side dish that the whole family enjoys! No saltine crackers or Ritz cracker crumbs. This recipe uses a box of cornbread mix. Corn kernels, creamed corn, Jiffy Mix, sour cream, eggs, and butter. Only takes a minute to make and is ready to eat in about 45 minutes. We make this all the time. Goes with everything! A great side dish for cookouts, potlucks, Thanksgiving, and Christmas dinners.

Jiffy Corn Casserole Recipe

This Scalloped Corn recipe is a staple at our house. I always have the ingredients on hand to whip this up any day of the week. It is a cross between corn pudding and cornbread. This recipe is a little different that some other scalloped corn recipes. This casserole uses a box of cornbread mix instead of crushed crackers. It is super easy to make and tastes great! I could have eaten the whole pan by myself. LOL! This is a great recipe for summer cookouts and your upcoming holiday meal.

How to Make Scalloped Corn Casserole

This casserole is super easy to make with only a few simple ingredients. In a large bowl, combine corn kernels, cream style corn, sour cream, eggs, melted unsalted butter, Jiffy Mix, onion, kosher salt, and black pepper. Pour the corn mixture into a baking dish sprayed with nonstick cooking spray and bake. That is it! I had the casserole ready to bake before the oven was preheated. It is that easy.

  • I used canned corn kernels. You can substitute frozen corn kernels or fresh corn if you prefer.
    • 1 can of corn is approximately 1½ cups. You need 3 cups of corn for this recipe.
    • 1 ear of corn is approximately 1 cup. You would need 3 ears of corn.
    • 1 pound of frozen corn is approximately 3 cups.
  • You can double the recipe in a 9×13-inch baking dish. You may need to add 5 or 10 minutes to the cooking time. Use a toothpick to check the center of the casserole. If it comes out clean, the casserole is done.
  • Feel free to add some sweet bell pepper to the corn mixture.
  • Can I add cheese to the casserole? Sure! Feel free to throw in a handful of sharp cheddar cheese, parmesan cheese, or swiss cheese.
  • Can Scalloped Corn Casserole be made in the Slow Cooker? Yes. Spray the crockpot with cooking spray. Mix the batter and pour it into the crockpot. Cover and cook on HIGH for 2 to 3 hours. Use a toothpick to check the center of the casserole. If it comes out clean, the casserole is done.
  • Can Scalloped Corn be frozen? Yes. Bake the casserole and let it cool completely. Cover the casserole dish with plastic wrap and aluminum foil and freeze. To reheat, thaw the casserole and reheat in the microwave or covered with aluminum foil in the oven at 350ºF until warm.
  • Store leftovers in an airtight container in the fridge.

Ingredients:

  • 2 (15-oz) cans whole corn kernels, drained
  • 1 (15-oz) can cream style corn
  • 1 Tbsp dried minced onion flakes
  • 2 large eggs
  • ¼ cup butter, melted
  • 1 cup sour cream
  • 1 (8.5-oz) box Jiffy cornbread mix
  • salt and pepper, to taste
  • tsp cayenne pepper, optional

Instructions:

  • Pre-heat oven to 350°F. Spray a 9×9-inch baking dish with cooking spray.
