We went "old-school" for dinner! This isn't anything fancy, it is just good. I love Mexican food (or Tex-Mex, Lea Ann) and I am always looking for a quick and healthier recipe to make at home. I have a neglected Bisquick cookbook and this recipe is one of the "All-Time Favorites". I vaguely remember eating this as a child, so I thought I would give it a whirl.
I coaxed Chicken Legs into the kitchen to help make dinner. He wasn't overly enthusiastic when I told him what we were having for dinner, but I just ignored him because I knew he would like it. It was very quick and easy to make. I could tell that his attitue was changing about dinner when he realized it was kind of like a taco quiche. The verdict? He LOVED it. He almost ate the whole thing by himself. We topped the pie with lettuce, tomato, and some Raspberry Chipotle Ranch Sauce. SO good! We are already looking through the cookbook to decide what Impossible Pie we are trying next!
Impossible Taco Pie
adapted from Bisquick
- 1 pound ground beef
- 1 Tbsp minced onion flakes
- 1 envelope taco seasoning mix
- 3/4 cup salsa
- 1/2 cup Bisquick
- 1 cup milk
- 2 eggs
- 3/4 cup shredded cheddar cheese
Preheat oven to 400. Grease pie plate.
Cook beef and onion until beef is brown, drain. Stir in taco seasoning and salsa. Spread in pie plate. Top with 1/4 cup cheese. Stir Bisquick, milk and eggs until blended. Pour into pie plate. Bake for about 25 minutes, sprinkle with remaining cheese. Bake additional 3-5 minutes, until cheese is melted. Serve with salsa and sour cream.
