Amazing Hard Boiled Egg Chocolate Chip Cookies

These cookies sound disgusting, but they are my new favorite chocolate chip cookie!  This is coming from someone who has never made a hard boiled egg, much less eaten a hard boiled egg (blah)!  I was amazed at how great these cookies turned out. 

I saw this recipe over on Cookie Madness years ago, but it was Katrina's post over on Baking and Boys after Easter that finally convinced me that I needed to make them.  I am sad it took me so long to try them.  The cookies are perfect - crunchy on the outside; soft and chewy on the inside.  Don't tell people that these have hard boiled eggs in them before they try them.  If they are like some of my picky friends, they won't try them.  I guess it would be their loss because these are the best!  I am buying some oatmeal this week so I can try the hard boiled egg oatmeal cookies next!

 Hard Boiled Egg Chocolate Chip Cookies

Amazing Hard Boiled Egg Chocolate Chip Cookies
Adapted from Katrina (Baking and Boys!), Anna (Cookie Madness) and Rita (Clumbsy Cookie)

  • 2-3/4 cups all-purpose flour (12.4 oz)
  • 1 cup unsalted butter, cubed
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 hard boiled eggs, chopped
  • 1 1/2 tsp vanilla extract
  • 1 (12-oz) package semi-sweet chocolate chips
  • 3/4 cup toffee bits

Preheat oven to 350.

Combine flour and butter in food processor. Pulse until mixture is mealy and coarse. Add the salt and baking soda and pulse to mix.

Add sugars, vanilla and hard boiled eggs to food processor. Pulse just until the mixture begins to come together. Stir in chocolate chips and toffee bits by hand.

Scoop cookies with a medium scoop and place on cookie sheet.

Bake approximately 13 -15 minutes or until cookies are lightly browned on the edges. Allow cookies to cool on the cookie sheet for 5 minutes and then transfer to cooling rack.

    Have you really never had a hard boiled egg? What about egg salad? Course I love eggs in almost every application, although I'm not brave enough to try century eggs. Heh.

    Glad you liked (loved) them so much. They might be my favorite ccc, too. But then there's Levain and NYT and I'm just not sure. Definitely perfect for leftover Easter eggs.
    The oatmeal version is for sure my favorite oatmeal cookies.
