When that vibrant bruschetta goodness meets the melted mozzarella cheese blanketing the chicken, it’s a symphony of flavors that’ll leave you craving every last bite. How to Make Bruschetta Chicken

This dish is super easy to make with only a few simple ingredients. In a large bowl, combine diced tomatoes with basil and oregano, extra virgin olive oil, balsamic vinegar, minced garlic cloves, fresh basil, and grated parmesan cheese. Season with salt and black pepper and toss to coat. Set aside.

Marinate chicken in Lawry’s Herb and Garlic Marinade for 30 minutes up to overnight.

Remove chicken from the marinade and pat dry with paper towels. Heat olive oil in a large cast iron skillet or grill pan over medium high heat. Add chicken breast and cook for 3 minutes on each side. Place skillet in the oven and bake until chicken reaches an internal temperature of 165ºF. Top the chicken with mozzarella cheese slices. Bake until the cheese melts. Remove the skillet from the oven. Top the chicken with the tomato mixture.

  • 4 chicken breasts
  • 1 (12-oz) Lawrys Herb & Garlic Marinade
  • 4 slices mozzarella cheese
  • 2 (14.5-oz) cans diced tomatoes with basil, oregano, and garlic, drained
  • 2 Tbsp ollive oil
  • 2 Tbsp balsamic vinegar
  • 4 cloves garlic cloves minced
  • 3 Tbsp chopped fresh basil
  • ¼ cup grated parmesan cheese

Instructions:
