Is anyone else not a morning person? This recipe is perfect for us! You can make this the night before and just pop it in the oven when you wake up and then hop back in the bed while it bakes.

This breakfast casserole was really good. Chicken Legs could have eaten it all himself. I might double the cheese next time – a little extra cheese never hurt anything! It is a great breakfast recipe if you have overnight guests. We had this for breakfast, but I think it would be really good for dinner too.

How to Make Overnight Bisquick Sausage Breakfast Casserole

This casserole is super easy to make with only a few simple ingredients. In a large skillet, cook sausage until crumbled and no longer pink. Drain excess grease. Place the cooked sausage in an 8-inch baking dish that has been sprayed with non-stick cooking spray. Sprinkle shredded cheese over the breakfast sausage. In a large bowl, whisk together eggs, milk, Bisquick, oregano, and dry mustard. Season with salt and black pepper. Pour the Bisquick mixture over the sausage and cheese. Cover the casserole dish and refrigerate a few hours to overnight. The next morning, preheat oven and bake uncovered until golden brown and set.

    • Can substitute turkey sausage for a lower-calorie dish.
    • Don’t like sausage? You can substitute bacon or ham.
  • What can I add to the casserole? Onion and Bell Peppers are a great addition. Sauté them in the skillet with the sausage.
  • Do I have to let the casserole sit overnight? No. If you are short on time you can bake this casserole right away. I’ve made it both ways and it tastes great baking right away or refrigerated. 
  • Can Bisquick Breakfast Casserole be frozen? Yes. Bake the casserole and cool completely. Cover the pan with plastic wrap and aluminum foil. Store in the freezer for up to 3 months.
    • Reheat in the microwave or covered with foil in the oven.
  • Store leftovers in an airtight container in the fridge.

  • Grease 2-quart casserole dish (8×8-inch pan or 11×7-inch pan).
  • Cook sausage in a skillet over medium heat, stirring occasionally, until no longer pink; drain.
  • Spread sausage in prepared baking dish. Top with cheese. Whisk together eggs, milk, Bisquick, dry mustard, and oregano. Pour over sausage.
  • Cover and refrigerate at least 4 hours but no longer than 24 hours.
  • Preheat oven to 350°F. Bake uncovered 50 to 60 minutes, or until knife inserted in center comes out clean.

Notes:

Can bake casserole right away instead of refrigerating.
Can substitute turkey sausage for pork sausage.
Can use low-fat cheese and Heart Healthy Bisquick.

  1. Easy recipe . My husband is allergic to mustard and we dont care for oregano so I cant say what those are like but it’s great with a jimmy dean hot breakfast sausage. I really like the texture of the eggs and bisquick. So fluffy and light!
