Foil Chicken

This is one of my favorite recipes from my childhood.  I can remember helping my Mom get the chicken ready and putting it on the grill.  It was one of my favorite meals.  Chicken Legs and I haven't made this chicken in ages.  I'm not sure why; It is so easy and one of the most flavorful chicken recipes we have made.  This is even easy enough for people who claim they can't grill.  We both loved this chicken - I ate the whole thing and was wishing for another piece!!




Italian Foil Chicken
(Printable Recipe)

2 bone-in skinless chicken breasts
1 cup Italian dressing (I used Pesto Italian dressing)
Heavy duty foil

Marinate chicken breast for several hours in 3/4 cup Italian dressing.  When you are ready to grill, tear off two squares of heavy-duty foil and place one chicken breast in the middle of eat piece of foil.  Pour remaining Italain dressing on top of chicken and seal the foil package.  Place on grill and cover.  Allow chicken to grill for approximately 30 minutes.  Open foil packets and grill chicken 5-10 minutes, just until chicken is completely cooked and has a nice color.  Enjoy!

  1. I've made chicken on the grill using Italian Dressing. Always fought with the flames, the basting, etc. I love this with the marinade time and the foil. Perfect!

  2. Italian dressing is a great marinade for grilling, I used to use it with steak tips all the time. The chicken looks great!

  3. We used to do the same thing but added a few veggies (bell pepper, onions, sun dried tomatoes, whatever) and always loved it. Boy scouts call them "hobo packs" or something like that.

    Always moist but finishing them with that sear like you do gives them the nice grilled crust.

  6. We use a charcoal grill - I would assume to grill it on high.
