Better than Jim 'N Nick's Cheesy Biscuits - delicious and easy mini cheese biscuits - I ate WAY too many of these! Only 5 ingredients and ready in about 15 minutes! Bisquick, buttermilk, sugar, vanilla and cheddar cheese.
Yield: 20 muffins
Better Than Jim N Nicks Cheesy Biscuits

ingredients:
- 1-1/2 cups Bisquick
- 3/4 cup buttermilk
- 3 Tbps sugar
- 1/4 tsp vanilla
- 1 cup cheddar cheese, shredded
instructions:
- Preheat oven to 425. Lightly spray a MINI muffin pan with cooking spray.
- Stir together all ingredients just until combined. Scoop into a mini muffin pan.
- Bake 12-15 minutes, until golden.

ReplyDeleteI didn't get any cheese flavor. I think I'd just leave the cheese out and save the money and calories. These would make a great breakfast biscuit.

I will have to try these. I always make the ones on Pioneer Woman's site, and they are DELICIOUS, but they require 3 cups of cheese, which can get pricey. Thanks for the recipe!
ReplyDeleteThis recipe is unbelievable. i followed the directions to the T and slapped some honey and butter on them. The vivid photos made me want to make a batch. I will be making them throughout the holiday season along with many other things I'm sure. It is great to save as much as possible when you shop. ReplyDeleteI think they're a little sweet for me, too. I made some today and they were good, but it was more like a dessert. I'm going to cut the sugar in half or more, up the cheese, and add some garlic salt. I sprinkled a little on the ones I made and it really jacked the flavor up a notch.

ReplyDeleteKristin - the biscuits I was copying are slightly sweet. You can leave the vanilla out and they will be ok. They will just taste slightly different, but not bad.

We love Jim n Nick's but only enjoy the biscuits while they are super warm because the longer they sit, the sweeter they get! Thanks for the recipe!!

ReplyDeleteI didn't taste any of the cheese... and the bisquick made them taste like pancakes. I have to put syrup on them just to make myself eat them. I found the actual recipe for jim n' nick's biscuits. Jim N' Nick's wins by far. These were a waste of resources. Gross.

ReplyDeleteCheddar Cheese Biscuits Recipe
Yield: 12 large biscuits or 18 small ones
2 cups/250g all-purpose flour (unbleached or regular)
3 tsp. baking powder
1 tsp. salt
1/2 tsp. garlic powder
1/3 cup/75g butter, cold, cut into chunks
2 Tbsp. canola or any flavourless, odourless vegetable oil
1 heaping cup/ 6-7 oz. /150-170g grated cheddar cheese (sharp flavoured is best)
1/2 – 2/3 cup or 120-160 ml milk
For brushing on top after baking:
3 Tbsp. butter
1/2 tsp. garlic powder
1/2 tsp. dried parsley flakes or 1 Tbsp. fresh parsley, finely chopped
In a large bowl, whisk together the flour, baking powder, salt and garlic powder.
Add the cubed butter. Using a pastry cutter or 2 knives or even a fork, cut butter into flour until it is coarse, pea-sized (doesn’t need to be fine).
Add oil, grated cheddar cheese and the milk. Stir till well combined and holds together.
Make sure to keep adding milk a bit at a time, just until the dough is moistened and you can no longer see any raw flour.
Drop approximately 1/4 cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop or large spoon.
Bake for 15-17 minutes in a preheated oven at 400F/.
While biscuits are baking, melt 3 tablespoons butter is a small bowl with 1/2 teaspoon garlic powder and the parsley & mix well.
When biscuits come out of the oven, use a brush to spread this garlic butter over the tops of all the biscuits. Do this a few times – it’s fun to watch all the butter getting absorbed into the biscuit! Use up all of the butter. Serve warm for best flavour.
Oh my I didn't realize so many people actually eat at Red Lobster!! But Jim n Nick's cheese biscuits are awesome! Ate there yesterday, just enough sweetness that I don't feel like I'm eating a bunch of bread before the pulled pork sandwich comes!! They sell their mix in the restaurant but may try this recipe just for fun. The ingredient list is not expensive by any means!

The dough seemed to be very gooey so I added a bit more flour. Are they supposed to pour rather then spoon into the muffin tins? Thanks.
