Sausage & Rotel Quiche Recipe

We love quiche at our house. It is super easy to make and tastes great. This Southwestern Sausage Quiche is one of our favorites! Quiche loaded with sausage and Rotel diced tomatoes and green chiles. YUM! I made this for lunch last week and we devoured the whole thing in no time flat! Next time I will make two quiches so we can have leftovers.

How to Make Southwestern Sausage Quiche

This dish is super easy to make. Start with cooking some sausage. Spread the sausage in the bottom of a pie crust. Top the sausage with cheese and some Rotel diced tomatoes and green chiles. Whisk together taco seasoning, eggs, milk, sour cream, salt and pepper. Pour the egg mixture over the sausage in the pie crust and bake.

  • I used Jimmy Dean sausage in this recipe.
  • You can use any type of cheese that you prefer.

  • I did not thaw or prebake the crust prior to adding the filling.
  • Is Southwestern Sausage Quiche spicy? We did not think this dish was spicy. If you are worried about the heat, use a can of Mild Rotel diced tomatoes and green chiles.
  • Can quiche be made in advance? Yes! You can assemble the quiche and refrigerate it overnight. I like to make the filling and pour it into the crust right before baking.
  • Can sausage quiche be frozen? Yes! You can freeze the quiche baked or unbaked.
    • To freeze the baked quiche, let the quiche thaw completely and wrap tightly with plastic wrap and aluminum foil. The quiche will keep up to 3 months in the freezer.
    • To freeze the unbaked quiche, assemble the quiche and transfer it to the freezer. Once the quiche is frozen, tightly wrap it in plastic wrap and aluminum foil. To bake, thaw completely, and bake as directed.

Ingredients:

Instructions:

  • Preheat oven to 350ºF.
  • In a large skillet, cook sausage until well browned, stirring frequently. Drain off grease and set aside.
  • Spread cooked sausage in bottom of pie crust. Top with shredded cheese and Rotel diced tomatoes and green chiles.
  • Whisk together taco seasoning, eggs, sour cream, and milk. Season with salt and pepper. Pour over sausage mixture in the pie crust.
  • Bake 1 hour. Allow quiche to rest for 5-10 minutes before serving.

  1. This was a no brainer to double: pie crust comes in 2 pack and 1/2 can rotel each. I was going to freeze one but hubby said “no way I’m eating both of these”. He had some for breakfast every day.

  3. Am I crazy or did this recipe used to have ranch dressing? I have made it several times but when I looked it up today it seems to be a different list of ingredients. Still looks tasty though!

    1. I did change the recipe. Here is the original:
      1/2 pound sausage
      1-1/2 cups cheddar cheese, grated
      1 can (10-oz) Rotel tomatoes, drained
      2 eggs
      1/4 cup Ranch dressing
      1/4 cup sour cream
      1/3 cup milk
      1( 9-inch) unbaked deep dish pie shell

  4. If I made two and froze one…how do you suggest reheating the frozen one? (This has been a house favorite for awhile!) Thanks!

    1. I usually freeze the quiche unbaked. I thaw it completely and bake as directed. If you want to freeze an already baked quiche, you can thaw it, cover with foil and bake at 350ºF for about 30 minutes. You can also remove the quiche from the disposable foil pan and reheat it in the microwave.

  5. I omitted the sausage for a Meatless Monday meal, and added some cilantro. Maybe I didn't give it a chance, but mine didn't look remotely done at one hour (but I didn't let it sit first). I increased the temp and time. It ran too late to have it for dinner, but it's going to be fabulous for breakfast!

  6. I pinned this several months ago and finally got around to making it tonight. It is SO good! Seriously one of the best quiches I've ever had. I doubled it so had to bake longer to get them both done and probably should have still done it a little longer to allow the center to set up a little more but overall I love it. This will be on repeat in our house!
