Hot Pressed BBQ Chicken Tortilla Wrap

Roly Poly is one of our favorite lunch spots. All the sandwiches are SO good. One of our favorites is #52 Hickory Chicken. I got a new sandwich press recently and decided to make a version of the sandwich at home. OMG! SO good! Sliced chicken breast, melted cheddar cheese, onions, mushrooms, bacon, BBQ sauce grilled golden brown and served with a side of ranch dressing! We both love this wrap! When we get it at the restaurant, I get it without mushrooms and onions. Chicken Legs gets it all the way! YUM!

How to Make Roly Poly’s #52 Hickory Chicken

These sandwich wraps are super easy to make. Start with placing a slice of cheddar cheese on a tortilla. Top it with sliced chicken, thinly sliced onion, mushrooms, bacon, and BBQ sauce. Fold the edges of the tortilla to the middle and place on a panini press. Cook until golden brown. Serve with a side of ranch dressing for dipping.

  • I made my sandwiches in the Breville Panini Press. I bought it at Amazon. You can use my affiliate link to buy it: https://amzn.to/3jw2CoU
    • If you don’t have a sandwich press, you can cook the wraps in a non-stick skillet like a grilled cheese sandwich. Use a griddle press to press the sandwich down in the skillet.
  • Roly Poly uses Tyson Grilled Chicken Strips. I bought the chicken at Walmart.
  • Roly Poly uses Ken’s Ranch Dressing. Bonus – it is low-carb!
  • I used Sweet Baby Ray’s for the BBQ sauce in the wrap.
    • For a low-carb wrap, use a low-carb/sugar-free BBQ sauce such as G Hughes’ Smokehouse Sugar-Free BBQ Sauce.
  • I always use La Banderita Carb Counter White Tortillas. The soft taco size only has 45 calories and tastes great!
    • You can use any tortilla you enjoy in this recipe.
    • Use gluten-free tortillas for a gluten-free meal.

What to Serve with Grilled Chicken Sandwiches

These sandwiches are a favorite at our house. It is our #1 way to use up any leftover grilled chicken. We serve the sandwiches with ranch dressing or salsa and chips. These wraps are also great with a salad, pasta salad, or french fries. Add these to your menu ASAP! I promise you won’t be disappointed!

Roly Poly Hickory Chicken Wrap – #52 on the menu – the Hickory Chicken. Roly Poly describes it as “Sliced Chicken Breast, Melted Cheddar Cheese, Onions, Mushrooms, Bacon, BarBQ Sauce, Grilled Golden Brown with a Side of Ranch Dressing. I describe it as DELICIOUS! Super simple to make at home. Use low-carb tortillas and sugar-free BBQ sauce for a yummy low-carb/keto-friendly meal!

Ingredients:

  • 1 (22-oz) bag frozen Tyson grilled chicken strips, thawed
  • 7 soft taco flour tortillas
  • 7 slices shredded cheddar cheese
  • 1 small onion, thinly sliced
  • 1 (4-oz) jar mushroom slices, drained
  • cup BBQ sauce
  • 7 slices cooked bacon
  • ¾ cup bottled ranch dressing

Instructions:

  • Place a slice of cheddar cheese on a tortilla. Top it with 3-oz sliced chicken.
  • Add a few pieces of thinly sliced onion, a few mushroom slices, 1 slice of bacon, and approximately 2 tsp of BBQ sauce.
  • Fold the edges of the tortilla to the middle and place on a panini press. Cook until golden brown.
  • Serve with a side of ranch dressing for dipping.

Notes:

4 bottles of store-bought BBQ sauce
  • Here are our favorite store-bought BBQ sauces.
    • I used Sweet Baby Ray’s for the BBQ sauce in the wrap.

  1. Enjoyed these! I used my George Foreman to press the wraps for 1 minute and it worked beautifully. I just used plain grilled chicken with some salt and pepper this time, but next time I think I'll do a quick marinade with the Lawry's Buffalo BBQ 30-minute marinade.
