Cake in a Can

I made this cake for Margaret, my Dad’s wonderful Wholesale Account Customer Service Representative. She retired yesterday after a long career at SAS Shoes in San Antonio.  This was a really big deal, so I wanted to do something really special for Margaret. I didn’t want to send cookies because I’ve been sending cookies to the Wholesale Account room for a few years. I thought about a cake, but how do you ship a pretty cake?   Well, I saw this cake in a can idea over on A. Party Style blog and thought I would give it a shot.

I bought a large tin at Michaels. They are over by the gift wrap at my store. I used my favorite pound cake recipe and it turend out to be the perfect size.  I baked it as normal in the oven.  I let it cool completely and started work on the fondant disk.  I used Duff’s buttercream fondant.  It was very easy to work with and tasted pretty good too!  Once I had my fondant layer complete, I frosted the pound cake with some butter cream and laid the fondant disk on top. 

I let the cake sit out overnight and then packaged it up for its trip to San Antonio.  I put a piece of wax paper on top of the fondant and then a piece of bubble wrap on top of that and then put the lid on.  I didn’t want the cake to get smooshed in case it moved.  I put the cake in a 13×13 box and packed the corners full.  When I was done, I heard absolutely no movement. 

Margaret loved the cake.  She said it arrived in  perfect condition.  Nothing was damaged.  I was SO relieved!!!  I am already keeping my eye out for some good Christmas tins.  I can’t wait to experiment with this more!

  5. I just love that idea! 🙂 I will have to watch for Christmas tins too and use this with hubby's clients. We normally send tins filled with candy but this would be even better!
