Almond Toffee Chocolate Chip Cookies – seriously delicious! Quick homemade cookies loaded with almond extract, sliced almonds and almond toffee bits. YUM! Can make ahead of time and freeze dough for later. Butter, sugar, brown sugar, eggs, vanilla, almond extract, salt, baking soda, baking powder, flour, chocolate chips, almonds and toffee bits. These are hands-down our FAVORITE cookie!!!
Chicken Legs had to go out of town last week for training, so I decided to surprise him with some cookies when he got home. (I’m not really that nice; I was bored hanging out by myself with the cats and needed something to do.) I looked in the pantry and saw that I had sliced almonds and toffee bits. I decided to make almond toffee chocolate chip cookies. It was the perfect for us because it combined my love of almonds and Chicken Legs love of cookies.
These cookies are wonderful! We absolutely loved them! You can really taste the almond extract in them, but it isn’t overwhelming. It was perfect – in my opinion. We loved the crunch from the toffee and almonds. We ate way too many of these. I shared a few with some people at work and they didn’t take any home to share with their family. I think that says it all….
Almond Toffee Chocolate Chip Cookies
ingredients:

1 cup butter, softened

¾ cup sugar

¾ cup light brown sugar, packed

2 eggs
-
½ tsp vanilla extract
- 1 tsp almond extract

1 tsp salt
-
1 tsp baking soda
-
1 tsp baking powder
-
2-¼ cups all-purpose flour
-
½ cup chocolate chips
-
6-oz sliced almonds
- 8-oz toffee bits
instructions:

Preheat oven to 375ºF.

Beat butter, granulated sugar, brown sugar, vanilla and almond extracts in large mixer bowl until light and fluffy, about 2-3 minutes.

Add eggs, one at a time, beating well after each addition. Gradually beat in flour, salt, baking soda and baking powder. Stir in chocolate chips, toffee and nuts.

Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Why do those cookies look like oatmeal cookies in the pic? Am I imagining that? Are these the same as the Almond Toffee Oatmeal Cookies? Trying to decide which to go with!
