Make-Me-Crazy Grill Marinade


We grill year round.  It doesn't matter if it is 100 degrees or 17 degrees outside.  It doesn't bother me because I am inside making the side dishes; Chicken Legs is the one outside in the weather.  He doesn't mind grilling in this frigid weather, but he certainly prefers to grill in the summer! 

I found this recipe on the Epicurious app on my trusty iPad.  This marinade reminded me a lot of the Mojo marinade we bought a while back. It has the same smoky citrus flavors going on.  The chicken was extremely flavorful and tender.  We loved it.  We made extra chicken so we could eat it for lunch later in the week.  This would make a great chicken fajita marinade as well. 

We used the marinade on chicken, but it is a very versatile marinade.  You could also try it on pork, fish or shrimp.  I have plans to use it on a pork roast very soon.  I am thinking pork tacos and quesadillas would be good.





Make-Me-Crazy Grill Marinade

1/3 cup lime juice
1/3 cup lemon juice
1/3 cup orange juice
1 1/2 tablespoons minced garlic
1 teaspoon dried oregano
3/4 teaspoon ground cumin
1 bay leaf
Salt and pepper to taste
1/2 cup salsa
2 tablespoons olive oil

Combine all the ingredients in a blender and blend well.  Place chicken (pork or shrimp) in a Ziplock bag and pour marinade over the meat.   Place the bag in the refrigerator, and marinate for 2 to 4 hours.  Grill.

  2. Lovely marinade. I like all the citrus. Now if only I could convince the hubby to grill when it's cold out. ;) What is a little snow?

  3. I have a tendancy to just use dry rubs and forget marinades until it's too late, so I'm glad to have one that works on many things.
