I changed it up a little and left off the onion and tomato and substitued some chunky salsa instead (kind of the same, but different). We grilled some of my favorite chicken tenders the night before, and I had these on the table in no time after work. I love sandwich night!!

#28 Santa Fe Chicken
(Printable Recipe)
1 small tortilla (I used Mission Carb Balance)
1 slice jalapeno jack cheese
1 1/2 grilled chicken tenders
1-2 tsp ranch dressing
1 Tbsp chunky salsa
salsa for dipping
Lay the tortilla on a flat surface. Layer ingredients in order on tortilla starting with cheese and ending with salsa. Roll up the sides of the tortilla and place in grill pan. Top tortilla with grill press and grill until golden brown. Turn over and brown the other side. Serve with a side of salsa.
You really do a good job of recreating meals you've had in restaurants.
