Chocolate Chip Turtle Cookies

A few months ago I was contacted by our local paper, The Birmingham News.   They saw my posts over on al.com and wanted to see if I would be interested in publishing some of my recipes in their weekly food section..  I, of course, said YES
Last Friday they came out to the house and took some photographs of me in the kitchen.  I made these Chocolate Chip Turtle Cookies for the photo shoot.  They were prefect for the shoot, and for the cookie monster that lives at my house. (You can see the article here)

The cookies tasted as good as they looked.  They were crispy on the outside and soft on the inside.  The addition of the caramel and pecans took a great chocolate chip cookie to a whole new level.  Make them next time you need to feed for your resident cookie monster!

Chocolate Chip Turtle Cookies
(Printable Recipe)

1 cup butter, softened
¾ cup sugar
¾ cup brown sugar, packed
2 large eggs
2 tsp vanilla
2 ¼ cups unsifted flour
1 tsp baking soda
½ tsp salt
2 cups (12oz) semi-sweet chocolate chips
12 caramels, each cut into 8 pieces
1 cup pecans, chopped

Heat oven to 375ºF.

Stir flour with baking soda and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add vanilla and eggs, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in nuts, caramel and chocolate chips. Drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes or until golden brown.
