Pizza Pancakes

I am always looking for new ways to enjoy our favorite foods; it helps keep dinner from getting boring.  I’ve really been into wraps and flatbreads lately.  I decided it was time to mix it up a bit.  Pancakes!  I am all for breakfast at dinner, but I wanted to make savory pancakes.  Since pizza is my all-time favorite food, I decided to give pizza pancakes a try.  They turned out to be really, really good!  
I had a lot of fun making the pancakes.  I finally got to use my griddle that came with my stove.  This is basically a pancake mix without sugar and your favorite pizza toppings mixed in.  You can use whatever toppings your family likes.  We used sausage, pepperoni and mushrooms.  I don’t eat mushrooms, so I just sprinkled the mushrooms on Chicken Leg’s pancakes when I scooped them onto the griddle.    We loved this!   I can see a lot more pancakes in our future!

Pizza Pancakes
(Printable Recipe)

2 cups Bisquick (I used Heart Healthy)
2 teaspoons Italian seasoning
¼ tsp red pepper flakes
2 eggs
1 cup milk
1 ½ cup shredded mozzarella cheese
½ cup chopped pepperoni (I used turkey pepperoni)
1 cup sausage, cooked and crumbled
¼ cup mushrooms, sliced
pizza sauce, warmed

In a large bowl, combine the biscuit mix, Italian seasoning and red pepper flakes. Combine eggs and milk; stir into dry ingredients just until moistened. Fold in the cheese, pepperoni, sausage and mushrooms.

Pour batter by ¼ cupfuls (I used a large cookie scoop) onto a lightly greased hot griddle. Turn when bubbles form on top; cook until the seconds side is golden brown. Serve with pizza sauce.

  1. Tried these tonight, made some for a choosey eater and socked away the rest to be a lunchable-type snack. Said eater made each pancake into a mini pizza, putting sauce and mozzarella on each one and microwaving them! (didn't put any toppings in the batter because of the choosiness, but did provide some mini pepperonis for topping) These are yummy & will be great to have on hand as quick snacks!

  3. Came across this recipe on Pinterest. My kids love all things pizza so we tried it tonight. HUGE HIT! I made a double match so there are leftovers for after school snacks. (Left out the red pepper flakes, sausage and mushrooms this time…but will sneak them in next time!)

  8. A fantastic idea – I love pancakes but when I eat them along with syrup it drives my pancreas crazy, but I believe this will work for me.

  9. What an interesting idea. I couldn't imagine the flavor but as soon as I read the sugar was left out of the batter, it all made sense. I love that the pepperoni and other ingredients were mixed into the batter.

  10. Hey! I'm a huge fan of your blog but was initially turned-off by the title of this post; however, after reading it…I can't wait to try these pizza pancakes!!! Love all your unique ideas and the recipes seem that they can be easily tweaked…since I'm a vegetarian 🙂
