Easy Instant Pot Risotto

I love risotto. I could eat it all the time and never get tired of it. The only problem with making traditional risotto on the stove top is that is a labor of love. Risotto is cooked very slowly by adding small amounts of warm broth at a time. The process allows the rice to release its starches, creating a rich, creamy texture with soft but slightly al dente rice. It isn’t hard work, it just takes time and patience to get it right. It isn’t really conducive to a weeknight meal.

I’ve tried several risotto recipes over the years, and this Instant Pot Parmesan-Prosecco Risotto recipe is the hands-down winner. It is made in the pressure cooker and only takes a few minutes of prep time. The risotto cooks to perfection in less than 10 minutes. It is al dente and wonderfully creamy. We both loved this. The flavors were spot on. This is such a versatile recipe; so many ingredients could be added to this risotto to make it a substantial meal on its own. I think some seafood and/or green peas and mushrooms would be nice. Instant Pot is a name brand of an electric pressure cooker. Depending on the model, the Instant Pot can also be used as a slow-cooker, rice cooker, and yogurt maker.

What is a pressure cooker? A pressure cooker is a sealed pot with a lot of steam inside that builds up high pressure and helps food cook in a fraction of the time of the oven or stovetop.

  • The extra liquid and moisture that the pressure adds help tough cuts of meat get very tender very quickly

How to Make Instant Pot Risotto

Making this creamy risotto in the Instant Pot is hands-down the easiest way to make it. Melt butter in the Instant Pot on the sauté function. Add chopped shallot and cook for a couple of minutes. Add fresh garlic and cook for 30 seconds. Stir in Arborio rice and stir for one minute with a wooden spoon. Add prosecco wine and cook until the liquid is absorbed, stirring constantly. Make sure to scrape up the browned bits on the bottom of the pot. Turn off the instant pot.

Add more prosecco and chicken broth. Cover the pot and seal the steam valve. Cook on high pressure for 8 minutes. Quick release pressure. Remove lid and add Italian seasoning and grated parmesan cheese. Give the creamy rice a good stir. Cover the pot and let sit 5 to 10 minutes to thicken. Give the rice a quick stir and serve.

  • What is the best risotto rice? You need to use a high-starch, short-grain rice such as Arborio rice, Carnaroli rice, or Vialone Nano rice. These special kinds of rice can absorb a lot of liquid without becoming mushy.
  • I use chicken broth. You can substitute vegetable broth, chicken stock, beef broth, or water.
  • Can substitute olive oil for butter.
  • Feel free to add white mushrooms, fresh herbs, frozen peas, butternut squash, or lemon zest.
  • Can add cooked chicken or shrimp to the cooked rice to make this a main dish.
  • Store leftovers in an airtight container in the refrigerator.

Ingredients:

  • 2 Tbsp butter
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1⅓ cups uncooked Arborio rice
  • 1 cup prosecco or other sparkling white wine, divided
  • 3 cups chicken broth
  • 1 cup fresh Parmigiano-Reggiano cheese
  • 1 tsp Italian seasoning
  • salt and black pepper to taste

Instructions:

  • Turn Instant Pot on “sauté”. Add butter to cooker; swirl until butter melts. Add shallot; sauté 2 minutes. Add garlic; sauté for 30 seconds, stirring constantly. Add rice; cook 1 minute, stirring constantly.
  • Add ½ cup prosecco; cook 1 minute or until liquid is absorbed, stirring constantly. Turn off Instant Pot.
  • Stir in remaining ½ cup prosecco and broth. Close lid and seal pot; set to "manual" or "high pressure" for 8 minutes.
  • Quick release steam. Remove lid.
  • Stir in cheese and seasonings. Let stand 5 minutes to thicken.
