It is suppose to rain this weekend here in Birmingham, so I decided to make my own sunshine! This is another Pinterest find. (Has anyone started Pinterest Anonymous yet? Hello, my name is Stephanie and I am a Pinterest addict.)
I decided to make lemon cupcakes because lemon feels like sunshine to me. I didn’t want to spend all day making cupcakes, so doctored up a lemon cake mix and just used a can of lemon frosting. The cupcakes tasted fantastic! I could have eaten several of these, but Chicken Legs didn’t save me any.
I thought the cupcake decorations were super cute. I used candy corn for the sun rays, mini chocolate chips for the eyes, and some red icing for the smile. Let the kids help out with the decorating and make some sunshine this weekend!
Lemon Cupcakes
(Printable Recipe)
- 1 package lemon cake mix
- 1 cup sour cream
- ¾ cup water
- ¾ cup oil
- 4 eggs
- 1 small package lemon instant pudding
Mix dry ingredients. Add wet ingredients. Mix with electric mixer on medium speed for about two minutes. Use a strong mixer, this batter is thick. For cupcakes, bake them at 350 degrees for 20 minutes. Allow to cool completely and frost with your favorite frosting.
