As you know, I love pizza.  We eat it at least once a week, so I am always looking for new ways to make it.  Don’t want to get stuck in a rut!  
We love the Family Style Calzone, so I decided to change it up and make some mini calzones this time.  These were really good.  I liked being able customize the calzones to each of our tastes.  I might actually like these better than the Family Style Calzone.  These are so quick and easy. Give these a try for your next pizza night!

Mini Calzones Recipe - Pillsbury Grands biscuits stuffed with cheese and your favorite pizza toppings. Quick recipe for lunch/dinner or after school snack. Bake and freeze for a quick on-the-go treat.

Mini Calzones
(Printable Recipe)

  • 1 can Grands biscuits
  • 7 ½ oz ricotta cheese
  • 3 oz shredded mozzarella cheese
  • 1 ½ oz parmesan cheese
  • 1 tsp Italian Seasoning
  • 1 egg white
  • Fillings of your choice – we used turkey pepperoni and sausage
  • pizza sauce for dipping

Preheat oven to 425 degrees.

 Mix together all cheeses, Italian seasoning and egg white.

 Roll out each biscuit into a large circle, approximately 5-inches round.

Divide the cheese mixture between the biscuits, spreading on to one half of the biscuits, leaving about a ¼ inch edge. Sprinkle cheese with your meat and/or veggies. Fold the opposite side of the dough over the filling and pinch edges to seal (I used a fork).

 Bake for 20-25 minutes. Allow to cool and serve with pizza sauce.

  2. LOVE these! You can definitely make them with pizza dough, if you have the time.

    I actually swapped the pizza fillings for sloppy joe mix the other night to make a quick and easy play on my mom's "Tidy Josephs!" Biscuits make life so much easier.

  5. These look so great! My kids will love them. Wonder if you can use pizza dough instead of biscuit dough? Admittedly, with biscuit dough they're already cut to size and therefore it's all quicker and easier. But just an option! How 'bout I try it and report back? 🙂 Thanks for great recipes!
