Polenta Pizzaiola

We really changed it up for pizza night last week with these polenta pizza bites.  I found this recipe on the Trader Joe’s Facebook page.  I had a roll of polenta in the pantry, so we gave it a try.  They were quick and easy, and they tasted fantastic!

I followed the Trader Joe’s recipe and just used cheese and sauce, but this can easily be adapted to your taste.  You could add sausage, mushrooms or onions – the possibilities are endless.  We had these as our main dish, but they would also make a great appetizer.  Enjoy!

Polenta Pizzaiola

  • 1 roll prepared polenta
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • ½ cup mozzarella cheese, shredded

Preheat oven to 375 degrees and spray a baking sheet with olive oil.

Cut the polenta into ½ inch thick slices and place them on the baking sheet. Spread a generous tablespoon of marinara sauce onto each polenta slice. Then place a generous tablespoon of ricotta over the marinara onto each slice. Sprinkle the top of each slice with some shredded cheese. Bake in the oven for 15 minutes. Place under the broiler for about 5 minutes or until cheese is glowing golden. Serve as an appetizer or alongside a fresh green salad or a bowl of soup.
