This recipe is from Plain Chicken reader, Diane Blake. She was kind enough to share her favorite recipe with me. I’ve never made a Doritos Cheesy Chicken Casserole, so we gave it a try.  This is one of those dishes that isn’t pretty, but it tastes really good.  We both really enjoyed this.  I used some rotisserie chicken meat and this came together in no time.  We both especially loved the Doritos!  Chicken Legs topped his plate with extra Doritos because you can never have too many Doritos.

Doritos Cheesy Chicken Casserole

Doritos Cheesy Chicken Casserole – THE BEST Mexican casserole EVER! Chicken, sour cream cream of mushroom, cream of chicken, salsa, corn, cheese and Doritos! Everyone goes nuts over this casserole. Ingredients:

Instructions:

  • Preheat oven to 350 degrees. Lightly spray a 9×13-inch pan with cooking spray.
  • Crush the entire bag of Doritos and cover the bottom of the dish.
  • Reserve one cup of cheese. Mix together remaining ingredients in a large bowl. Pour chicken mixture over the Doritos.
  • Bake uncovered for 20 min. Top casserole with the remaining cheese and bake 5 additional minutes or until melted.

  1. I love this recipe! I make it all the time for our family. I am trying to adapt it for a daycare. We aren’t allowed doritos. Is there anything we could use in it’s place?

  2. This was delicious! A family member doesn’t care for mushrooms, so I used 2 cans of cream of chicken. I also noted the comments about it being more like a dip than a casserole, so instead of putting all the chips at the bottom, I layered them like a lasagna, which evenly distributed them through the dish and made the texture perfect. It took about 50 min for mine to heat all the way through. Thanks for a terrific recipe!

  7. Enjoyed it in our house. We would suggest more chicken than the recipe calls for, but that’s certainly a personal preference. I was thinking of how to add in some flavor – obviously anything you like on your tacos – green chilis or jalapenos, etc. I was even thinking about rice? Literally eating left-overs as I write this. Make sure to have extra Doritos on hand to give that crunch if warming up. 🙂
