Chicken Legs is a big fan of sloppy joe's. I like the flavor of sloppy joe's, but I hate how messy they are. I always end up eating them as an open faced sandwich. I decided to solve this problem by putting the sloppy joe mixture in a biscuit cup for dinner last week. YUM! They tasted great and were much easier to eat. We both agreed that we liked the biscuit cups better than our usual open-faced sandwiches. Give this a try for an easy lunch or dinner. I promise you can't just eat one!
Sloppy Joe Biscuit Cups
(Printable Recipe)
1 lb ground round
1/2 cup ketchup
4 tsp sugar
4 tsp mustard
4 tsp vinegar
4 tsp Worcestershire sauce
1 Tbsp dried minced onion flakes
1 can (10-count) regular refrigerated biscuits (not Grand's)
1/2 cup cheddar cheese, grated
Preheat oven to 375 degrees.
Cook meat slowly in skillet. Drain and put back in skillet. Add ketchup, sugar, mustard, vinegar, Worcestershire sauce and minced onion flakes. Cook slowly over low heat for 10 minutes, to allow meat absorb the sauce.
Separate dough into 10 biscuits; place each biscuit in ungreased regular-size muffin cups. Firmly press dough in bottom and up side of each cup.
Divide meat mixture between biscuit cups. Top each biscuit with grated cheese.
Bake 17 to 20 minutes or until biscuits are golden brown and cheese is melted.

Hmmm, this biscuit cup idea gives me a notion to try the cinnamon rolls with bacon or sausage in it.
Love it! Husband loves them and I find them too messy. I have everything I need to make these tonight. Best thing is they aren't complicated!

I have ground beef in my fridge that must be cooked off for dinner tonight. I was completely lacking in inspiration. Eek...sorry everyone, but these were disgusting and they ruined my muffin pan. The "sauce" was not moist enough, and by the time it was done simmering according to the directions, it was already dry. Once it went into the oven according to directions, the biscuits ended up extremely dry and the beef, well, it was like sandpaper. The smell of the sauce was disgusting enough, but the taste? AWFUL! I should have known better than to EVER put anything into my muffin pan without being greased first. Even my kids wouldn't touch it.
I made this last night, another hit! I did find they worked better using the jumbo biscuits in a larger muffin tin, those came out perfectly without greasing the pan. The smaller one did bubble over a bit but after soaking the muffin tin over night it was clean. I'm not even a big fan of sloppy joes but I loved this, the flavor was much better than the stuff that comes out of a can! And it feels better to know exactly what's going in it!
My boys are pretty much all grown now, but I know they'd love these. I used to make a lot of Bisquick Impossible Pies and this reminds me of one. So not on my diet, so I'm going to ease away from the monitor... :)

I am making these tonight. I have never made my own sloppy 'jo sauce. I hope it is sweet and tangy as it looks! This is my 3rd recipe I will be trying from Plain Chicken and I have yet to be disappointed! Thanks!
