The long Memorial Day is coming up this weekend. I don’t know about you, but I am ready for a long weekend! This week I am going to share some recipes for an easy Memorial Day BBQ. First up is the main dish – BBQ Chicken in the slow cooker. This chicken was recommended by my Mom, and it was super easy and delicious! I seasoned the chicken the night before and just finished it off the morning we ate it. This would be great for your Memorial Day BBQ or an easy weeknight meal.
Slow Cooker BBQ Chicken

1 Tbsp salt
3 tsp paprika
1 tsp garlic powder
1 tsp pepper
1 (3- to 3 1/2-lb.) cut-up whole chicken
½ cup Coke
⅓ cup ketchup
¼ cup firmly packed light brown sugar
2 tablespoons apple cider vinegar
2 tablespoons bourbon
2 tsp lemon juice
Stir together salt, paprika, garlic powder and pepper in a small bowl. Sprinkle over chicken. Place chicken in a single layer in a 6-qt. slow cooker.
Whisk together Coke, ketchup, brown sugar, vinegar, bourbon, and lemon juice in a small bowl. Slowly pour mixture between chicken pieces
Cover and cook on low 6 ½ to 7 ½ hours or until done.
Transfer chicken pieces to a serving platter. Skim fat from pan juices in slow cooker. Pour pan juices over chicken; serve immediately.
