Easy Snickerdoodle Cake Mix Cookies

These Cake Mix Snickerdoodle Cookies are so quick and delicious! Chicken Legs wanted something sweet last night, and I didn’t want to spend a lot of time making something. I found this recipe on a box of cake mix and decided to give them a try. They only took a few minutes to make and they tasted yummy! The cookies were soft on the inside with a little crunch on the outside from the cinnamon sugar mixture.

How to Make Cake Mix Snickerdoodles 

These cookies are effortless to make with only four simple ingredients. In a small bowl, combine granulated sugar and ground cinnamon. Set aside. In a mixing bowl, stir together cake mix, cream of tartar, vegetable oil, and eggs. Using a small cookie scoop, shape dough into 1-inch balls. Roll balls in the cinnamon sugar mixture. Place on parchment paper lined baking sheets. Bake until the edges start to turn golden brown. Cool cookies on the pan for 2 minutes. Remove cookies to cool completely on a wire rack.

Ingredients:

  • 1 box yellow cake mix
  • ½ cup vegetable oil
  • 2 large eggs
  • ½ tsp cream of tartar
  • ½ cup sugar
  • Tbsp ground cinnamon

Instructions:

  • Preheat oven to 350ºF. Line cookie sheets with parchment paper.
  • In a small bowl mix together sugar and cinnamon. Set aside.
  • In a mixing bowl, stir together cake mix, oil, eggs, and cream of tarter.
  • Using a small cookie scoop, form dough into 1-inch balls.
  • Roll balls into cinnamon sugar mixture. Place balls on prepared cookie sheets.
  • Bake for 9 to 11 minutes. Cool on the pan for 2 minutes. Remove from pan and cool on wire rack.
