And a great recipe I found for

Roasted Garlic Hummus
Makes about 1 1/2 cups

For Roasted Garlic you will need:

1 bulb garlic
1 tablespoon butter
1 teaspoon lemon juice, divided
kosher salt
For Hummus you will need:

1 (15.5 ounce) can garbanzo beans, juice reserved
2 tablespoons tahini
2 teaspoons lemon juice
1/4 teaspoon kosher salt
1 tablespoon olive oil
2 cloves garlic, minced
paprika

Preheat oven to 400 degrees.

Cut 1/4 inch off the top of the bulb of garlic to expose the cloves beneath, but do not peel the garlic, you want to roast it in the skin. Place clove on a piece of aluminum foil, place butter on top, pour lemon juice over the garlic and sprinkle with kosher salt. Bring up all sides of aluminum foil and twist together to close. Cook for 60 minutes or until garlic cloves are soft and golden in color. Allow to cool.

When the garlic is cool enough to touch, use a fork to remove the cloves and add them to the blender. Next add garbanzo beans, tahini and lemon juice. Puree until smooth. Add 3 tablespoons of reserved garbanzo bean juice. Puree. If you would like a thinner dip, add a little more of the reserved juice.
Transfer hummus to a bowl, stir in kosher salt.
In a small saucepan heat olive oil over medium heat. When hot, add minced garlic and cook for 30-60 seconds or until fragrant but not browned. Pour garlic oil into hummus. Stir. Sprinkle with paprika. Serve.
I like using a blender rather than a food processor due to sometimes the processor food will go too high wile processing , with a blender you have more control over what and how much you can put in without a huge mess .
Not to mention , my blender is ancient . LOL
Thanks so much for the oppertunity to win ,
Have a beautiful day !
Deb

Great blog! Your recipes fit my lifestyle and tastes. My favorite blender recipe is a white bean dip I found online.

1 (15.5 oz) can white beans (cannelloni or great northern are great)
2 cloves garlic
2 T lemon juice
1/3 cup extra virgin olive oil
1/4 cup parsley (cilantro is great as well)
Salt
Pepper
I also like to add some red pepper flakes and cayenne for the extra kick and flavor

Serve with your favorite dipping vessel. The original recipe recommends pita chips:
Cut pita bread into wedges
Drizzle with olive oil, oregano and garlic powder
Bake at 350 until golden (8-10 minutes)

We love pureed vegetable soups. I make all kinds - carrot, butternut squash, broccoli, whatever I have on hand. When I cook the veggies in broth, I add about two tb uncooked rice to the pot along with seasonings and usually onions. When its cooked, I blend everything in the blender. The cooked rice (cook it til its really soft) thickens the soup. It gives a much silkier texture than using potatoes.

Favorite blender recipe....two things I prefer:

Breakfast Fruit/veggie smoothie - 1 cup almond milk, 1 banana, 1 apple, 1 peach, 2 cups spinach, 1/4 avocado, and any other fruit I have on hand.

Oatmeal sweet potato waffles - blend oatmeal to make a flour, add egg whites and cooked sweet potato, cinnamon, little brown sugar, splash of vanilla, dash of nutmeg and ginger. Depending on the quantity I make, I will adjust the amounts of oatmeal and egg whites to reach the right consistency. Pour into waffle iron, mine takes about 4 minutes.

I don't have a regular blender any more. We wore it out. I got a Bullet blender 2 years ago and it is not big enough to do much in. My favorite thing is to put sugar free vanilla pudding mix in w/1/2 milk and a small container of fruity lowfat yogurt (frozen). Sometimes I add a little more fruit and sometimes ice. Just depends. I tend to play swap the cup and combine. Sometimes I drink and sometimes put it in the freezer in little cups or popsicle tubes. Children love them. Just use your favorite fruit. Also, you can use different kinds of pudding for variety. I have used banana pudding and added a banana w/pecans on top.
