First of all, I have to tell you that Chicken Legs LOVED these quesadillas. He raved about them the whole time he was eating them. They have all the flavors of a hamburger without having to break out the grill. To save time, I browned the meat over the weekend so all I had to do was assemble the quesadillas after work. These took no time to make. Fill these with your favorite burger toppings. We used bacon, pickles, tomatoes and some spicy ranch dressing. They were delicious! Chicken Legs has requested these for dinner again this week.
Bacon Cheeseburger Quesadillas
serves 6

- 1 lb ground beef
- ¼ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp pepper
- ¼ tsp chili powder
- 6 tortillas
- 2 cups shredded cheddar cheese
- 6 slices bacon
- tomatoes
- pickles
- Spicy Ranch dressing
In a large skillet, sprinkle ground beef with onion powder, garlic powder, pepper and chili powder. Brown the meat and drain fat. Set aside.
Assemble the quesadilla. Heat a large skillet over medium heat. Spray pan with cooking spray.
Lay tortilla on a flat surface. Cover the torilla with an even layer of cheese. Top one half of tortilla with hamburger meat, bacon, tomatoes and pickles. Drizzle Ranch dressing over meat. Place tortilla in skillet. Cook for 1 minute, until cheese starts to melt. Fold in half – cheese side of tortilla over on meat. Cook for 2 minutes more, flipping until each side is golden and crisp. Remove, cut into 3 pieces.
I'm probably looking straight at it and missing it but where are the tortillas from?

These sound great. I make something like this with refried beans and green chiles and call it a Mexican Hamburger!
