BBQ Chicken Pizzadilla

This Pizzadilla was inspired by the California Pizza Kitchen’s BBQ Chicken Pizza.  I love to eat at the California Pizza Kitchen.  Their pizza is delicious, and I love the spinach and artichoke dip (LOVE IT).  The only thing I don’t like about CPK is that they only serve Pepsi products.  I am a Coca-Cola girl; I only drink Diet Coke.  SO, I am forced to drink water at CPK.

Back to the pizzadilla. It has all the flavors of the BBQ Chicken pizza, and it only takes a few minutes to make.  I sauteed the onions so they weren’t so overwhelming, but if you like raw onions you can skip that step.  I used some Boars Head Chipotle Gouda cheese that I found at Publix. It wasn’t spicy, it just gave the pizzadilla a little extra flavor (regular gouda or mozzarella will work too).  These pizzadillas are wonderful!  We both devoured them.  This will definitely be going in the regular rotation (along with a Diet Coke).

BBQ Chicken Pizzadilla
1 pizzadilla

1 large flour tortilla
2 Tbsp BBQ sauce (Sweet Baby Ray’s)
cooked chopped chicken
chopped red onion
cilantro
⅓ cup shredded chipotle gouda cheese (or regular gouda or mozzarella)
cooking spray

Heat a medium skillet over medium heat. Spray pan with cooking spray.  Saute chopped onions until soft.  Set aside.

Lay tortilla on a flat surface. Cover the tortilla with an even layer of BBQ sauce. Top one half of tortilla with chicken, onions and cilantro.  Cover tortilla with cheese.. Place tortilla in skillet. Cook for 1 minute, until cheese starts to melt.  Fold in half – cheese side of tortilla over onto the toppings. Cook for 2 minutes more, flipping until each side is golden and crisp.  Remove, cut into 3 pieces.

  1. Not drinking any kind of soda is so good for you, even if it's a diet drink. I mostly drink water now everywhere I go, except when I am having coffee, glass of wine or beer.
    I have tea at home, no sugar.

  2. I am so glad to hear that there is someone else out there who gets a pain in their heart when places on serve Pepsi products!!! Diet Pepsi is definately the devil! 😉
