These were absolutely delicious! This has all the flavors of tacos/enchiladas stuffed inside a jumbo pastas shell. I stuffed the shells with taco meat, cheddar cheese and cottage cheese. I know a lot of people aren't fans of cottage cheese. You should give it a try in this dish. I don't eat cold cottage cheese, but I love it baked in pasta dishes. If you aren't feeling adventurous, you can substitute ricotta cheese. This dish can make these shells ahead of time and bake them when you are ready - perfect for after a long day at work. This makes a ton. I got 21 shells. This would be great to freeze all or half of this for an easy meal another night.
First of all, I have to tell you that Chicken Legs LOVED these quesadillas. He raved about them the whole time he was eating them. They have all the flavors of a hamburger without having to break out the grill. To save time, I browned the meat over the weekend so all I had to do was assemble the quesadillas after work. These took no time to make. Fill these with your favorite burger toppings. We used bacon, pickles, tomatoes and some spicy ranch dressing. They were delicious! Chicken Legs has requested these for dinner again this week.
In the South, black eye peas are a must for New Years. They are said to bring you good luck in the new year. I am not one to tempt fate, so we always eat black eye peas on New Years Day. This year I am going to make this recipe in my slow cooker. They couldn't be any easier. You don't have to soak the beans, just rinse them off and put them in the slow cooker. This Pizzadilla was inspired by the California Pizza Kitchen's BBQ Chicken Pizza. I love to eat at the California Pizza Kitchen. Their pizza is delicious, and I love the spinach and artichoke dip (LOVE IT). The only thing I don't like about CPK is that they only serve Pepsi products. I am a Coca-Cola girl; I only drink Diet Coke. SO, I am forced to drink water at CPK.
Back to the pizzadilla. It has all the flavors of the BBQ Chicken pizza, and it only takes a few minutes to make. I sauteed the onions so they weren't so overwhelming, but if you like raw onions you can skip that step. I used some Boars Head Chipotle Gouda cheese that I found at Publix. It wasn't spicy, it just gave the pizzadilla a little extra flavor (regular gouda or mozzarella will work too). These pizzadillas are wonderful! We both devoured them. This will definitely be going in the regular rotation (along with a Diet Coke).
