This idea came from Chicken Legs. He suggested that we should try a buffalo style skirt steak. We both love buffalo style chicken, so why not steak? OMG! This was fantastic! We let the steak marinate for a few hours and grilled it. I whipped up a quick bleu cheese sauce while the steak was cooking, and drizzled it over the steak. WOW! This was my first time actually eating bleu cheese and it wasn’t as scary as I had imagined. It was really tasty in the sauce. Please give it a try even if you are like me and don’t like bleu cheese. This was absolutely delicious and not super spicy. This is going into our regular rotation.

Buffalo Style Skirt Steak with Bleu Cheese Sauce

Steak
- ¾ cup hot sauce (such as Crystal)
- ¼ cup butter, melted
- 2 teaspoons Worcestershire sauce
- ½ teaspoon onion powder
- 2 pounds skirt steak
- 2 Tbsp butter
- 2 Tbsp flour
- 1 ½ cups milk
- ⅓ cup Bleu Cheese crumbles
- 2 tsp pepper
- 1 tsp salt
- ¼ tsp red pepper flakes (optional)
Cheese Sauce
Steak: Combine hot sauce, melted butter, Worcestershire sauce, and onion powder in a bowl. Reserve ¼ cup hot sauce mixture; pour remaining hot sauce mixture in a zip-top plastic bag. Add skirt steak to bag; seal. Marinate at room temperature 20 minutes (don’t refrigerate it – the butter will harden). Remove steak from bag; discard marinade in bag. Grill steak until done (about 7-10 minutes). Brush reserved marinade over steak. Serve with bleu cheese sauce, if desired.
Cheese Sauce: In a medium saucepan, melt the butter over medium-high heat. Add flour, milk and bleu cheese crumbles. Whisk until crumbles melt. Add salt, pepper and red pepper. Stir well, until it starts to boil. Turn down heat to low and let simmer 3-5 minutes, until sauce thickens. Serve over skirt steak.

Kristin – for medium-rare, I would cook it 4 or 5 minutes on each side. Skirt steak is very thin, so it doesn't take long to cook.
This looks soooo good! I don't have an outside grill, so do you think a grill pan on my stove would work ok and for how long on each side?
