Cheesy Honey Mustard Chicken


This is SO easy and it is TO DIE FOR delicious!  It is probably in my top 5 favorite chicken recipes.  I was able to assemble this in the time it took for the oven to preheat.  This could also be prepared ahead of time and stored in the refrigerator.  I think that would only make the chicken taste better to sit in the honey mustard mixture all day!   Make sure to spoon some of the sauce that is in the pan over the chicken when serving.  You don't want to waste any of that goodness.  Chicken Legs cleaned his plate in record time and requested to have this again the next night.  It was that good! This is obviously going in our regular dinner rotation.



Cheesy Honey Mustard Chicken
serves 4

4 boneless chicken breast
3/4 cup honey
1/2 cup Dijon mustard
1 tsp lemon juice
1/2 tsp paprika
lemon pepper to taste
4 Tbsp bacon, cooked and chopped (I used Oscar Meyer bacon bits in the yellow bag)
1 cup shredded mozzarella cheese

Preheat oven to 375.

Season chicken breasts with lemon pepper.  Place in 9x13 baking dish.

Combine honey, mustard, lemon juice and paprika.  Pour over chicken.  Bake for 20-25 minutes.

Top each chicken breast with 1 Tablespoon of bacon and 1/4 cup mozzarella cheese.  Continue to bake until cheese is starting to brown (about 10 minutes).

Does it matter if the chicken breasts are fresh or frozen when you start?

Rachel - I have only made this with thawed chicken. If you use frozen, you will need to increase the cooking time by at least 10 minutes so the chicken can thaw. The time will depend on how thick your chicken is. You will just have to play with the time if you use frozen chicken. I usually just take my chicken out of the freezer and put it in the fridge the night before or the morning I plan on making this.

Does it have a really strong mustardy flavor. I love honey mustard that does not have the strong mustard flavor to it. Is this something I should skip?

calkari - this doesn't have a strong mustard flavor (I hate mustardy stuff too). The honey is the dominant flavor. I think this chicken is super delicious!

My husband is getting seriously tired of chicken (its the cheapest thing here in hawaii), so i've been looking for new ways to mix it up... i've been everywhere from panko to brown sugar, to attempting to make chickfila (be cause it doesn't exist here and we absolutely love it). i can say that i tried this recipe today (trial to see if my husband would actually eat it) and the chicken turned out absolutely amazing! unfortunately i didn't get the chance to try it with the lemon juice (didn't have any). this definitely will show him that there is a lot more left to chicken than just panko.

I made this last Monday night for my Dad when he came through on his way back to Brasil (long story). I added mushrooms at the same time as the bacon bits, but otherwise didn't change a thing. This is absolutely delicious!!! It tastes very much like Alice Springs Chicken at Outback. I'm in love with this dish! My dad was highly impressed! The only thing I'll do differently next time is decrease the lemon juice just a tiny bit. Thank you so much for a fabulous recipe!
