French Fry Casserole

This recipe is from my friend Joan. This is one of her go-to weeknight meals. It is super easy to make and her kids love it. We love burgers and fries at our house, so I gave it a try. YUM! I love that the fries are baked right on top of the cheesy burger mixture (one less dish to clean). I put the casserole under the broiler for a few minutes after it was baked so the fries would be extra crispy. We topped our casserole with some burger toppings – pickles, ketchup and mustard. I tried some of the casserole topped with Ranch dressing – also very tasty! Many thanks to Joan for sharing this wonderful weeknight meal with us!

French Fry Casserole
serves 8

2 lb ground beef
salt
pepper
2 cans Cheddar Cheese soup
2 Tbsp ketchup
1 Tbsp mustard
1 package (26oz) golden crinkle fries
2 cups shredded cheddar cheese

Preheat oven to 350.

 In a large skillet cook the ground beef until no longer pink. Drain the fat and mix in cheddar cheese soup, ketchup, mustard, salt and pepper. Pour into a lightly sprayed 9×13-inch pan. Top meat mixture with french fries. Try to get them as close to a single layer as possible. Top fries with cheese.  Bake for 20 minutes.  Broil for 1-2 minutes, until fries are crispy.

  1. kash18 – yes, put the frozen fries on the hamburger mixture. Don't flip them. They aren't soggy. I did pop them under the broiler for a few minutes, but that isn't necessary. Enjoy!

  3. I would use onion, garlic and cumin in the ground beef. And added grated sharp cheddar cheese to the soup (which I would heat in the microwave before Adding to the meat. Hmmmm….. And I would have lined the baking dish with pickled jalapeños! Also, I would browned the fries deeply and then sprinkled cheese to be boiled to perfection! I can't wait to try it.
