This recipe combines my two favorite sweet treats – Reese’s peanut butter cups and brownies. Chicken Legs always gives me Reese’s for Valentine’s Day because he knows they are my favorite. He is such a good guy.
These little Reese’s Brownie Bites couldn’t be any easier. It is just brownies baked in a mini muffin pan and then a Reese’s miniature pushed down in the center. I used Ghiradelli Double Chocolate brownie mix. You can use any brownie mix you like – make “fudge-like” brownies. It is amazing that something so simple can taste so delicious! These would make great gifts for neighbors, co-workers, teachers and classmates.
36 Reese’s miniature peanut butter cups, unwrapped
Preheat oven to 325.
Combine brownie mix, egg, oil and water. Stir until combined. Drop rounded Tablespoons into mini muffin pan. Bake 15-18 minutes.
Remove from oven and immediately press a Reese’s peanut butter cup in the center of the brownie. Top with sprinkles if desired. Allow to cool and remove from pan.

katherine – I did not grease my pan, but I have new Goldtouch pans from Williams-Sonoma. Nothing sticks to them. I would recommend lightly spraying the pan with some cooking spray just to be safe. You can also use mini cupcake wrappers to line the pan.
Lauren – I think Ghiradelli is the best store bought brownie mix.
