Easy Quiche with Potatoes

This Loaded Potato Quiche is a family favorite. It has t had all the flavors of a loaded baked potato – diced potatoes, bacon, cheese, sour cream, and green onions. This is effortless to make and tastes delicious! Great for breakfast, brunch, lunch, and dinner. I usually make two quiches because this doesn’t last long at our house!

How to Make Loaded Potato Quiche

This recipe is super easy to make with only a few simple ingredients. Place the frozen diced potatoes in the bottom of a deep-dish pie crust. Sprinkle with shredded cheddar cheese, bacon crumbles, and green onions. In a bowl, whisk together eggs, whole milk, garlic powder, and sour cream. Season with salt and black pepper. Pour the egg mixture into the pie crust. Place the quiche on a baking pan and bake in a preheated oven until a toothpick or knife inserted into the middle of the quiche comes out clean or with a few crumbs.

  • There is no need to thaw or prebake the frozen pie crust before filling and baking.
    • You can substitute a homemade pie dough or refrigerated pie crust for the frozen pastry.
    • Use a gluten-free pie crust for a gluten-free recipe.

  • I use frozen diced potatoes. You can substitute hash browns.
    • To quickly thaw the potatoes, microwave them for 30 seconds before adding them to the quiche.

    • I prefer to freeze the quiche unbaked. Assemble the quiche and place it in the freezer. Once the quiche is frozen place it in a freezer bag. When ready to bake, thaw the quiche in the refrigerator before baking as directed below.
    • To freeze the baked quiche, cool it to room temperature and wrap the pie dish with plastic wrap and aluminum foil. When ready to reheat, thaw and reheat in the oven or microwave before serving.
  • How long will Homemade Quiche last? The quiche will keep for 3 to 4 days covered in the refrigerator.

This quiche was a huge hit at our house. It is already back on the menu again this weekend! This dish is great for dinner, potlucks, or brunch. For breakfast, we serve this with some cheese grits and biscuits. For lunch or dinner, whip up a green salad or some green beans and crusty bread. You must add this to your menu ASAP! It is sure to be a hit!

  • Pre-heat oven to 350ºF.
  • Place the cooked diced potatoes in the bottom of a deep-dish pie crust. Sprinkle with shredded cheddar cheese, bacon crumbles, and green onions.

  1. love this quiche. i cook two small potatoes in the micro and cube them. works great. also, i add garlic powder in with the eggs, since we love garlic. and i have used ham instead of bacon before when time was short and it was also delish.

  2. Jessica – I freeze the quiche before baking. I wrap it is plastic wrap and then with foil. I let it defrost in the fridge before baking. You can bake it frozen – cover it with foil and bake about 15 minutes, remove the foil and continue to bake about 30-40 minutes.

  5. Made this tonight. Great flavor but my potatoes were still hard. I couldn't find freezer diced potatoes, so I got a bag of refrigerated. After being in the oven an hour, they were still hard and my crust was about to burn. But otherwise this was good, had a spring mix salad with it and strawberries.
