Several people commented on my Baked Cracked Out Chicken and Rice that they had a hard time getting the rice to cook. I have never had any issues with the rice cooking, so I wasn’t really sure what the problem was. I decided to make a stovetop version with instant rice in hopes the rice would cook easier for everyone. This recipe has all the same flavors, but it is just easier to cook.

What does Cracked Out mean? Cracked out means the recipe has cheddar, bacon, and ranch in the recipe. It started with our famous Crack Dip recipe. We’ve been cracking out recipes since 2007.

How to Make Chicken & Rice on the Stovetop

This chicken and rice is SO simple! It is actually much easier and faster than the original. Start with bringing the cream of chicken soup, chicken broth, and instant rice to a boil. Add the ranch dressing mix, cooked bacon, cheddar cheese, and cooked chicken. Cover the pan and simmer on low for about 15 minutes. That is it!

  • I used rotisserie chicken for the cooked chicken in this recipe. This recipe uses about a half of a chicken.
  • You can use any can of cream of anything soup you prefer – chicken, mushroom or celery all work great.
  • Can substitute turkey bacon for regular pork bacon.
  • I don’t like instant rice. Can I use regular rice? I have not made this dish with regular long grain rice. I am sure it can be done with a few adjustments. Instant rice cooks in an equivalent amount of liquid and doubles in size. Regular long-grain rice cooks with a 2:1 water to rice ratio. One cup of regular rice equals 3 cups of cooked rice.
  • Can I use instant brown rice? Sure! You will need to adjust the cooking time. Instant brown rice takes longer to cook than instant white rice.
  • If you are sensitive to the ranch dressing mix, feel free to adjust the amount to your personal preference.

What to Serve with Crack Chicken & Rice

This only took about 20 minutes from start to finish. You can’t beat that! Chicken Legs raved about this version. He went back for seconds.  This was also great reheated for lunch the next day. Give this a try the next time you need a quick weeknight meal! We usually serve this dish with some green beans and bread.
