The grated cheese in the soup really puts this chili over the top. YUM! Iāve never had a white bean chicken chili with cheese cooked into it. I wonāt make it another way! It smells amazing while it is cooking and tastes even better! It is a great alternative to traditional chili. We ate this for dinner and had the leftovers for lunch the next day. It was just as good reheated, if not better! This recipe is a great alternative to traditional chili.
How to Make White Bean Chicken Chili in the Crock Pot
As I said, this chili is super easy to make. Place chicken breasts, great northern beans, diced green chilies, salsa, chicken stock, cumin, and grated pepper jack cheese in the crockpot. Season with salt and black pepper. Cover and cook on LOW for 6 hours. Remove the chicken breasts from the slow cooker and shred them with two forks. Add the shredded chicken back to the slow cooker and stir.

I made this two days ago and it was really tasty! We like 'spicier' foods so I used hot diced green chilies and medium salsa. I also used 1 can pinto and 2 cans white/navy beans. More importantly, it was DONE after 3-4 hrs on low! Any longer and it would have burned. I will definitely make this again!

I have the same question. I was going to try it with frozen chicken. It usually cooks well in the crock pot.
You could use frozen chicken. It would definitely cook. I used cooked chicken because that is what the original recipe said to use.
I love white bean chicken chili and the only recipe I have is much harder than this. Love how easy this one is.
I have made a couple of really good soups that I got off Pinterest that called for Parmesan rind as an ingredient slowly cooked with it….new to this old school Southern girl!
