Dirty Steve's Wings {Football Friday}


Are you ready for the Super Bowl this weekend?  I am a huge college football fan, but I am not a big fan of the NFL. Chicken Legs, on the other hand, loves the NFL.  He is really looking forward to the game this weekend.  I am looking forward to the commercials.

One thing we are both looking forward to are these wings.  They are the bomb!  They have the perfect amount of heat and tons of great flavor.  The sauce is the best I've ever made.  I mixed the sauce up the day before I made the wings and stored it in the refrigerator.  I baked the wings and tossed them in the sauce right before we ate them.  DELICIOUS! You might want to double the recipe below.  These won't last long with a crowd.

Salsa Burgers

Burgers are one of our favorite things to grill out.  They are so quick and easy.  They are even easy enough to do during the week.  These burgers combined our "Burger Night" and "Mexican Night" into one.  I took one of our favorite burger recipes and switched up the ingredients to make it a fiesta!  The burgers were delicious.  We topped them with some jalapeno-jack cheese for an added kick.  Guacamole would also be good (I didn't have any or we would have added it).  Give these a try for your next burger or Mexican night! These would also be great for the Super Bowl this weekend.

Chipotle BBQ Chicken Taquitos

I can not begin to tell you how tasty these Chipotle BBQ Chicken Taquitos were.  The smokiness of the chipotle combined with the sweetness of the BBQ sauce was divine!

These are so easy to make.  I used half of a rotisserie chicken and the filling was ready in minutes.  You can also prep the filling the night before and just store it in the fridge if you are pressed for time.  These do have a little kick from the minced chipotle peppers.  You can control the spiciness by adding more or less peppers.  I topped the taquitos with some Ranch dressing and dried cilantro.  Delicious!

Slow Cooker Dinner Rolls

I've been seeing some posts on Pinterest about making bread in the slow cooker.  I decided to give it a whirl.  Let me tell you, this is GREAT!  It is so easy and only takes about 2 1/2 hours from start to finish.  This is my new go-to method for making Rhodes Rolls.  

I used a 6 quart slow cooker and baked 9 rolls.  You will need to adjust the amount of rolls depending on the size of your slow cooker.  The cooked rolls right out of the slow cooker are not brown on the top.  They are done, they just don't look done.  To remedy that, I stuck the rolls under the broiler for about 90 seconds.  They had a nice color and tasted great.   Who knew you could make rolls in the slow cooker?!  So cool!

Beergarita Chicken over Chipotle Gouda Grits

This is one of the best things we've had in a while.  It was SO delicious.  I set the plate down in front of Chicken Legs and when I looked up, it was gone!  He inhaled it.  He said he wished I had made more.  Next time I will!

This dish is easy to make.  I marinaded the chicken in a mixture of frozen margarita mix and beer - hence the name "Beergarita Chicken".  It was great.  The grits were to die for too.  If you don't have any Chipotle Gouda, you can use regular Gouda cheese and add a little ground chipotle.  Either way, this dish is to-die-for!

French Fry Casserole

This recipe is from my friend Joan. This is one of her go-to weeknight meals. It is super easy to make and her kids love it. We love burgers and fries at our house, so I gave it a try. YUM! I love that the fries are baked right on top of the cheesy burger mixture (one less dish to clean). I put the casserole under the broiler for a few minutes after it was baked so the fries would be extra crispy. We topped our casserole with some burger toppings – pickles, ketchup and mustard. I tried some of the casserole topped with Ranch dressing – also very tasty! Many thanks to Joan for sharing this wonderful weeknight meal with us!

Hot Sausage Dip

The most exciting football game of the season is coming up next weekend, The Super Bowl!  I am not a huge fan of the NFL; I am more of a college football girl.  My favorite part of the Super Bowl is all the new commercials and the tailgating food.  I love grazing on all the finger foods and dips.  I usually make a meal of it.

The star of this year's Super Bowl party is going to be this Hot Sausage Dip.  This is one of my favorite tailgating recipes.  It is always a hit, and I never have any leftovers.  This recipe uses a can of diced tomatoes and green chiles and a pound of hot sausage.  If you are worried this dish might be too spicy for your guests, you can adjust the heat by using regular sausage and a can of mild diced tomatoes and green chiles.

I like to serve this dip with some tortilla and corn chips.  You can make this dip ahead of time and refrigerate it until Sunday afternoon.  I have also frozen it, and it bakes up wonderfully.  If you want to bake it frozen, bake it covered for 15 minutes and uncovered for 30 minutes.

So, whether you are pulling for San Franciso or Baltimore (or the commercials), I think everyone can agree this dip is a touchdown!
