Santa Fe Chicken & Rice

This is another one-pot meal. I am really loving the convenience of less dirty dishes! I cooked the chicken and the rice mixture in my Calphalon non-stick skillet and it took no time at all.

I marinated the chicken first thing in the morning in my favorite Lawry's marinade -  Baja Chipotle. I know a lot of people have a hard time finding the Baja Chipotle Marinade (I buy it all the time at Publix). If you can't find the Baja Chipotle Marinade, use the Lawry's Mesquite Marinade. It will give you a similar Tex-Mex flavor.

We both loved this dish. It was full of flavor and tasted great!  The best part is this dish is that it is low in fat and calories! Don't tell anybody - they will never know!

Chicken Parmesan Skillet Pasta {No Boil}

This is another one of my no-boil pasta dishes. I am officially obsessed with this cooking technique! This no-boil pasta is my take on Chicken Parmesan Pasta. It has all the flavors of Chicken Parmesan without the frying. I used chopped chicken in the pasta and added some bread crumbs and mozzarella cheese on top. It was SO delicious! This makes a ton and is very filling. Plan on feeding a crowd or having leftovers for lunch.

Deep Dish Pizza Cupcakes

Pizza is my all-time favorite food.  I could eat it for breakfast, lunch and dinner.  The other day I was in the mood for deep dish pizza.  I wanted something quick, so a traditional deep dish pizza was out of the question.  I had a can of crescent rolls in the fridge, so I made these deep dish pizza cupcakes.  They were SO good.  They took about 20 minutes from start to finish.  We had them for lunch, but they would be great for a quick dinner.  These can be customized for every family members personal preference.  You might want to double the recipe, these don't last long!

Egg Roll Manicotti

This manicotti was easy and super delicious.  It tasted like it was from our favorite restaurant.  I used egg roll wrappers in place of the pasta tubes, since they are basically just fresh pasta sheets. They turned out great, and I didn't have to boil the pasta sheets! That is always a win in my book.

I used a three cheese mixture, but I think this would be a really good dish to sneak in some spinach. I am going to start adding frozen spinach to my standard items to keep in my freezer so I can add it so some dishes on the fly. This made 12 manicotti rolls.  I made the whole batch and ate some for lunch the next day.  This would also be a great dish to freeze for a quick weeknight meal.

Scrambled Egg Salad


Chicken Legs' loves egg salad sandwiches.  They are his all-time favorite.  He would eat them every day if he could.  I decided to try a new version of egg salad last weekend - Scrambled Egg Salad.  Instead of hard boiling the eggs, I scrambled the eggs.  It was so quick and much easier than boiling and peeling eggs.  It only took about 5 minutes to throw this together.  The best part, the egg salad tasted great.  Next time to you have a hankering for an egg salad sandwich, try this version.  Quick and delicious!

Chocolate Dipped Football Pretzel Bites {Football Friday}

Saturday is A-Day for both Auburn and Alabama. I am really excited to see our football friends and get a taste of college football for a day! No football gathering is complete without food.  I made a batch of these super cute chocolate covered peanut butter pretzel football bites - that's a mouthful - for the party tomorrow.  

These are simple to make and SO much fun to eat.  I dipped the pretzels in chocolate almond bark and let them dry. Next, I used a squeeze bottle to pipe the laces on the pretzels.  I think they turned out so cute and they tasted great.  Chicken Legs and I both agreed the pretzels are a little dry without the chocolate coating.  {Queue up Kramer "These pretzels are making me thirsty."}

The main event in Auburn on Saturday is "The Last Roll". We are rolling the Auburn Oaks at Toomer's Corner one last time. Growing up in Auburn, rolling Toomer's has been a part of my life for as long as I can remember.  It will be bittersweet to roll the original oaks on Saturday, but I look forward to the future oaks and keeping the tradition alive. War Damn Eagle!
