Double Bacon Cheddar Smokehouse Burger

I hope everyone is enjoying the first full day of college football and the Labor Day weekend! We are going to be watching tons of football and grilling out all weekend. This burger is most definitely on the menu. It has amazing flavor and is packed full of yummy bacon. Bacon is not only on top of this burger, it is ground up inside the burger too! Bacon overload!

These burgers tasted incredible. They were better than most burgers we eat out. We loved all the bacon and the smokey BBQ sauce. You could really kick this up and use the maple bacon from the burger I posted earlier this week. This recipe makes 6 burgers. We grilled three a few weeks ago and are grill the remaining burgers tonight. I can't wait!

Beer Brined Chicken Wings {Football Friday}

Football is finally here! Hallelujah! We are kicking off the season with these awesome Beer Brined Chicken Wings. We've made several variations of wings, but this one might be the best of them all.

I baked these wings because I don't like to fry food at home. They tasted great. We both ate way too many of these. I used a homemade wing sauce (found here), but I am a big fan of Frank's wing sauce too. The brine really made a difference. It made the wings super tender and juicy.

Give these a try for your football watching parties tomorrow. I promise they will be a hit - no matter who you root for!

Peanut Butter Cup Brownie Muffins

These brownie muffins combine two of my favorite foods - peanut butter and brownies. Both are my kryptonite. These brownies are very simple to make and taste delicious. They are moist, fudgy, and delectable! I can't get enough of them! I like to put one in a bowl and top it with vanilla ice cream. Holy YUM!

If you don't have peanut butter cups, you can substitute any flavor baking chips. I've made these with semisweet chocolate chips, peanut butter chips, butterscotch chips and even white chocolate chips.  These would be great with some mint or peppermint chips at Christmas time.

The brownies will be making an appearance at our Labor Day feast. I will probably take some to the football game this weekend too! YAY for college football!!

Maple-Bacon Beer Burgers

I saw this on Iowa Girl Eats, and I knew I had to try it.  Kristin adapted her burger from the Iowa Beef Industry Council. I looked at both recipes and decided to put my own twist on the burgers.

We both LOVED this burger! Absolutely LOVED it!! The burgers were so juicy and the bacon was heaven sent. I baked the bacon in the oven and brushed it with pure maple syrup. I will be making the bacon again for breakfast, or just for snacking. In my opinion, it is good anytime of the day.

The burgers only have a few ingredients. I am sure you have them on hand right now. I am making a batch of these burgers when I make the Beer-B-Q Chicken for Labor Day. It is a great way to finish off the beer (if you don't want to drink it). Give these a try ASAP!

Beer-B-Q Chicken

Labor Day is coming up next week. Hooray for a holiday! This BBQ chicken is perfect for your holiday cookout. It was good and tangy! The original recipe was intended to be a mop sauce for smoking chickens. We don't have a fancy smoker (yet), so I decided to marinate some chicken and smoked sausage overnight in the mixture.

I had some concerns because the marinade had so much apple cider vinegar, but I couldn't taste it after the meat was cooked. I think the beer and BBQ sauce mellowed it out. Use your favorite beer and BBQ sauce in the marinade. I used a Miller Light and KC Masterpiece Original BBQ sauce.

I have also made this marinade with apple juice instead of the beer. It was equally delicious!

We brushed the chicken and sausage with some additional BBQ sauce to finish it off. This was out-of-this-world delicious! We are making this again for Labor Day. This was some of the best BBQ chicken we've ever had (if not the best).

Taco Crescents

These taco crescents were inspired by one of my favorite breakfast/tailgating recipes - Sausage and Cream Cheese Crescents. I was thinking about new recipes and wondered how taco meat would taste instead of sausage. I gave it a try and it was fabulous!

You can make the meat mixture ahead of time and store it in the refrigerator until you are ready to bake the crescents. I like to do bite size crescents. I split the crescent roll in half to make two triangles. Feel free to skip that and just put double the meat on one full crescent roll.

I used lean ground beef, low fat cream cheese and low fat crescent rolls and I couldn't tell a difference. I served the crescents with a little salsa and ranch for dipping. These Taco Crescents are great for a quick lunch or dinner. They would even be perfect for tailgating! I can't wait for college football next week! Are you as excited as I am?!?

Bubble Up Lasagna

Bubble Up Lasagna - Italian sausage, spaghetti sauce, 3 cheeses tossed with chopped refrigerated biscuits - all the flavors of lasagna without all the work! I literally wanted to lick my plate! Precook the sausage and this dish is ready before the oven can preheat!

I love homemade lasagna. It might be my all-time favorite food. I could give Garfield a run for his money on a pan of homemade lasagna! Seriously! My usual lasagna takes hours to make. I make the sauce from scratch and it simmers for a few hours. I only make it on special occasions because it takes so much work. I can't go too long without having lasagna, so I have to make some quick versions every now and then. This dish had all the flavors of lasagna, but with a fraction of the effort.

I browned the sausage ahead of time and this took minutes to assemble. I literally had this ready to go in the oven before it had finished preheating. We loved, loved, loved this dish! I wanted to eat the whole thing! It was full of cheesy goodness. I really loved all the meat sauce that the biscuits cooked in. Make sure you scoop up the sauce that is left in the pan and pour it over the biscuits when serving.
