Southwestern Chicken Salad {Football Friday}

This is not your ordinary chicken salad. It is packed full of great southwestern flavors. It has corn, peppers, tomatoes, lime juice, taco seasoning and cilantro. It is out of this world delicious! Chicken Legs said this was better than restaurant quality. He said I should open a restaurant and sell this.

This is a great recipe to use up any leftover cooked chicken. I actually like to use rotisserie chicken in this recipe. It is quick and tastes great. I've made this several times and it is always well received. I like to serve it on mini croissant rolls, but it is also good on crackers. This is great for a party because it can be made in advance and stored in the refrigerator. Make a batch for tailgating this weekend. I promise, this chicken salad is not to be missed!

Baked Crack Dip Chicken Tenders

I adapted this recipe from my Buffalo Dip Chicken Tenders recipe. I thought if chicken fingers baked with buffalo dip was good, it would probably be even better with my Crack Dip! I was right, these chicken tenders were delicious! I used some Chobani Greek yogurt in this recipe. It cut way down on the fat, and I didn't feel as guilty eating this. If you want to cut down the fat and calories even more, use low-fat cheese and turkey bacon.

This was so simple to make. You can mix together the Greek yogurt mixture ahead of time and assemble the chicken when you are ready to bake it. We both loved this dish. It had great flavor with the Ranch, cheddar and bacon (a.k.a. "Crack Dip").  This is definitely going into the dinner rotation.

Morton's Key Lime Pie

Morton's Steakhouse is my favorite steak place. It is my go-to dinner spot when we go to Nashville. I love sitting in the bar and watching people. The last time we ate dinner there, Chicken Legs got the Key Lime Pie. He loved it. He said it was one of the best he has eaten. I have two Morton's cookbooks and luckily their key lime pie recipe is in one. I decided to give the recipe a try and see how close it came to the original.

I was surprised to see that Morton's recipe used a Keebler graham cracker crust and lime juice out of the bottle. I would have never guessed. I did make one change, and use key lime juice from the bottle instead of regular lime juice. It turned out delicious. Chicken Legs said it tasted just like the original. Woo Hoo! We can now get our fix without having to take a road trip.
