My Favorite Pumpkin Recipes

Unlike the rest of the food blogosphere, November is when I usually start thinking about pumpkin recipes.

I am pretty sure it has to with the fact that it doesn't start to cool off in Alabama until Halloween. It is hard to think about pumpkin and fall recipes when it is 90 degrees outside!

I have a few new pumpkin flavored recipes coming up this month, including a Pumpkin Cheesecake from The Ritz Carlton. It is to-die-for!

Until then, here are a few of my favorite pumpkin recipes from the years past:

Creole Honey Mustard Chicken Sandwich

This is another recipe I can't stop thinking about. This chicken sandwich was SO good. I loved everything about this sandwich, especially the pretzel bun! I think I would eat just about anything on a pretzel bun. I found these larger pretzel buns at Earth Fare. That is the only place that I have found them. If you know of other places, let me know!

The chicken is marinated in a mixture of dijon mustard, honey and Cajun/Creole seasoning. I used some of the seasoning I picked up in New Orleans. It was delicious! We ate this for lunch and it was better than any chicken sandwich I've had in a restaurant. I can't wait to make this again!

Bloody Mary Steak

When I told Chicken Legs about the marinade for this steak he was skeptical. He mentioned to the butcher what I was doing, he was also skeptical. Well, shame on both of them! This was AWESOME!

Chicken Legs said this was the best skirt steak marinade I've made. Oh yes! I agree, and I don't even drink Bloody Mary's. I made quesadillas with the leftover steak and it was just as delicious. I can't stop thinking about how great this steak was. I am already planning on making it again this weekend.

Pecan Pie Muffins {Football Friday}

These little muffins taste just like a pecan pie. I actually think they are better than pecan pie because I don't like pecan pie. It's is the filling that turns me off to pecan pie. It is a consistency thing. I am sure it is awesome, but I just can't do it. Chicken Legs, on the other hand, LOVE pecan pie and these pecan pie muffins.

These muffins only take a minute to whip up and taste great. I love that they are bite sized. Just pop one in your mouth and you are good to go! These muffins travel well, so they are perfect for tailgating. These would also be great for breakfast (anytime really). Sometimes I like to sprinkle some powdered sugar on top of the muffins for a little extra sweetness. Give them a try!

Cracked Out Chicken Noodle Casserole

This recipe came about much like my Crack Potatoes recipe - leftover Crack Dip. I hardly ever make a regular chicken casserole. I think the old-school sour cream and cream of chicken soup recipe is too mushy and lacks flavor. I thought if I substituted Crack Dip for the sour cream and added noodles it might be good. I was wrong, it was great! Seriously delicious! Chicken Legs especially loved it. This makes a ton, so I froze half of it for later. This is definitely going in the regular dinner rotation!

Spooktacular Halloween Candy Cake

YEARS ago, I made a cake decorated with Kit-Kats. It was so much fun! I decided to put a Halloween twist on that cake and use black Twizzlers and Reese's Pieces for the decorations. I think it turned out super cute spooky!

I took this cake one step further and make a orange and black zebra cake. I used a box of white cake mix for the cake, but you can make your own. Since I used a cake mix, I decided to make homemade chocolate buttercream. It delicious! I tinted the buttercream black for Halloween. It looked creepy, but it tasted great.
