Chocolate Almond Cupcakes {Football Friday}

The Super Bowl is this Sunday. I'm not really into the actual game. I am much more interested in the commercials and the food! This year I am whipping up a batch of these Chocolate Almond Cupcakes. They are super easy to make and they taste great! I especially love the frosting. It starts with a can of store-bought frosting. I am not normally a fan of canned frosting, but I folded in some Cool Whip and WOW! Light and tasty frosting. You can't beat a 2 ingredient frosting!

I doctored up the cupcakes with some chopped almonds, chocolate chips and almond extract. They tasted great and everyone that tried them really enjoyed them. I found the cute football cupcake liners at Walmart. They are foil so they don't fade when they bake. Love that!

"Cracked Out" Chicken Braid

If you follow the blog, you know one of my favorite flavor combinations is cheese, bacon and Ranch. We refer to this combination as "crack" because it is SO delicious and SO addictive! This "Cracked Out" Chicken Braid is no different. We actually ate this twice in one week! We couldn't get enough of this braid!

Chicken Legs especially loved this. I knew he would love it. He loves all of the "crack" recipes. I mean what's not to love? Chicken, bacon, cheese and Ranch? YUM! It is even more delicious because it is all wrapped in a crescent roll. Isn't everything better wrapped up in a delicious crescent roll? If you are worried about fat and calories, you can definitely use 2% cheese, turkey bacon and reduced-fat crescent rolls. I haven't found a reduced fat Ranch dressing that I like. If you have one that you like, let me know!

Bacon Cheeseburger Skillet {One-Pot}

Bacon Cheeseburger Skillet {One-Pot} - everything cooks in the same pot, even the pasta! Hamburger, bacon, onion, beef broth, Rotel, cream cheese, pasta and cheddar cheese. Ready in 20 minutes!

I love these no-boil, one-pot dishes. They are delicious and make for an easy clean up since they are all made in just one dish. This Bacon Cheeseburger Skillet is crazy good! How could it not be? Pasta, cheese, hamburger and bacon? I couldn't stop eating this! It is cheesy, creamy and has a little kick from a can of Rotel tomatoes. If you are sensitive to heat, make sure you use a can of Mild Rotel.

This dish is super easy to make. It only took about 30 minutes from start to finish. I love quick and tasty meals, especially during the week! This makes a lot. Fortunately, it is great reheated for lunch or dinner the next day.

Chicken Parmesan Bubble Up

Bubble Up dishes are one of my favorite weeknight meals. I love brainstorming and coming up with new ways to make them. This Chicken Parmesan Bubble Up might be one of my favorites. It has all the flavors of chicken parmesan without all the frying!

I used frozen popcorn chicken for this dish. I didn't cook the chicken first. I just let it cook while the rest of the dish baked. It turned out great! It tasted delicious and it was even good reheated for lunch. Serve this with a side salad for a quick and tasty weeknight meal!

I can't believe I finally got to go to Disneyland!
I am a huge Disney fan, so this was the highlight of my trip to Los Angeles.

There was a lot more transportation on Main Street.
They had electric cars, carriages and the train.

Our first ride was the Matterhorn Bobsleds.

I wanted to ride this since we don't have this at Disney World.

It was fun!
My Dad (at the very back) didn't look too thrilled about it though!

I had three things on my list to eat at Disneyland.
First up was the corn dog from  The Little Red Wagon.

The corn dogs are hand dipped and DELICIOUS!
The are also HUGE.
I did a number on it. YUM!

Pirates of the Caribbean is one of my favorite rides at Disney World.
I couldn't pass it up at Disneyland.
The ride is different in the beginning and the end from the one in Disney World.
The middle is basically the same.
Overall - we all loved it!

My all-time favorite ride at Disney World is Haunted Mansion.
I was excited to ride it in Disneyland.
Unfortunately, it was closed!
I was devastated!!!

I wanted to go all "Griswold" on them and make them open it!
I love how it was decorated in a Nightmare Before Christmas theme.
Guess this is my excuse to come back!

I thought this whale was fun!

The Tower of Terror is my second favorite ride in Disney World.
We gave it a whirl in Disneyland.
My parents wouldn't ride this one with us.

The ride was different than in Disney World.
Disneyland has more elevators and two levels for riders to get in the elevators.
We were on the top level both times.
We didn't have to go up, we immediately dropped.
It was SO much fun!

Lunch time!
We went with Mexican food from Cocina Cucamonga.

The food was the best I've ever had inside the park.
Usually these food stands have food that is just OK.
This food was delicious. It was just as good as any Tex-Mex restaurant.

Soft Tacos

Citrus Chicken

We finally got to ride Soarin'.
We've been to Disney World a million times, and we've only ridden Soarin' once.
This was the same as Disney World. The only exception was that the wait wasn't forever!
On the way our of the ride soma kid barfed right next to us.
It splattered a tiny bit on Chicken Legs' leg.
He was horrified. If you know him, you know he was truly traumatized!

The Boudin Bakery has a restaurant in the Pacific Warf area of California Adventure.

They offer bakery tours.
You can walk in the area that the bread is made and see everything.

LOVE the Mater sourdough bread!

I loved the lightning bugs in A Bug's Land.

We took a little break and rode the train all around Disneyland.

Space Mountain is always fun at Disney World.

The ride is different than Disney World.
First, the seating is different. It is double the capacity of the Disney World ride.

The ride was less jerky and super fun!
We liked it much better than the Disney World version.

I can't stop laughing at my parents reaction to the ride!

No trip to Disney is complete without seeing Mickey!

Paradise Pier might have been my favorite.

We rode the big roller coaster - California Screamin'
I did a lot of screamin' - LOL!

My hair was crazy wind-blown when we came to a stop.

These two peanut butter treats were on my list of things to eat at Disneyland.
You can't get them in Disney World, so I had to make sure we tried them.

The peanut butter sandwich was super rich.
It was a graham cracker topped with peanut butter and dipped in chocolate.

The peanut butter heaven was just that, heaven.
We both really liked this one.
It tasted like a peanut butter snickers.

Dinner was at Naples in Downtown Disney.
We've eaten at their restaurants in NYC and Epcot, so we knew this would be good.

The restaurant was super busy, so we sat at the bar.

We started with thePanzerotti.
It was fried pizza dough filled with fresh mozzarella, artisan ricotta and Parmesan, marinara sauce.
It was, in a word, DELICIOUS!

We split the 10-inch pizza with pepperoni and Italian sausage.
O-M-G! SO delicious!
I wish I could eat this every day!

I had a blast at Disneyland. I wish I had one more day to redo some of the rides and eat more!
There is so much more that I need to do and eat!

What an amazing trip to Los Angeles! We both said this was one of our best vacations ever.

I need another excuse to come back - soon!
