This soup was ready in about 30 minutes. It only takes a few minutes of prep time and it just simmers away on the stove. It made the house smell amazing! I took a couple of shortcuts with this soup. I used rotisserie chicken and precooked bacon. Both are great time savers! I can't believe something so delicious is so quick and easy to make!
Chicken, Bacon and Rice Soup
- 32 oz chicken broth
- 2 1/2 - 3 cups water
- 1/2 cup long grain rice, uncooked (not instant)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp garlic salt
- 1/4 tsp pepper
- 1 can cream of celery soup
- 3 carrots, sliced
- 6 slices bacon, cooked and chopped
- 12 oz cooked, chopped chicken
In a large saucepan or Dutch oven, combine chicken broth and water. Bring to a boil. Add rice. Reduce heat to medium-high and continue to boil for 10 minutes. Stir in remaining ingredients, reduce heat and simmer for 20 minutes.
