Pin This RecipeOne of my favorite quick side dishes is to open a box of Rice-A-Roni or Pasta-Roni. They taste good and are super easy to make. I saw a version of this recipe floating around on Pinterest and thought it sounded like Pasta Roni. It had two of our favorite flavors, garlic and parmesan, so I decided to give it a try. OMG – SO delicious and super easy! This is a one-pot dish and it doesn’t require precooking the noodles. They cook right in the pot! Awesome!
We served the noodles with one of our favorite grilled chicken recipes, Rosemary Ranch Chicken. The noodles tasted great and were almost as easy as opening a box of Pasta-Roni. This will definitely be a regular side dish for us. I am already planning on making these again this coming weekend.
Creamy Garlic Noodles {Homemade Pasta Roni}
Ingredients:
- 2 tsp olive oil
- 6 cloves garlic minced
- 2 Tbsp unsalted butter
- ¼ tsp salt
- ½ tsp pepper
- 3 cups chicken stock
- ½ lb angel hair pasta
- 1 cup grated parmesan cheese
- ¾ cup heavy cream
- 1 Tbsp dried parsley
Instructions:
- In a large pot, heat olive oil over medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Add the butter; cook until melted. Add the salt, pepper and chicken stock.
- Turn the heat up to high and let come to a boil. Add the pasta and cook for 4-5 minutes. Once pasta is tender, reduce the heat to medium and stir in the parmesan, cream and parsley until cheese is completely melted. Remove from heat and serve immediately.

This is on regular rotation in our house! I try to remember the day before to throw a whole head of garlic in the oven and roast it. Then I just use my stick blender to incorporate the roasted garlic with the chicken stock and no need for the extra olive oil or butter. I also use half and half instead of heavy cream and it’s still sooo good! I could eat the whole pot myself.
I’m going to try it with the roasted garlic next time. That sounds AMAZING!
I made this on a whim one night because I was craving the boxed stuff! We had everything on hand but the heavy cream. I used half and half plus 2 tbsp of flour to thicken it up and we couldn’t get enough! I can’t wait to try it again with the heavy cream 😋

Now I live with a huge family now! I like to put all dry ingredients in a mason jar so it’s ready when I want to make it.
Really yummy recipe. I used fusilli/ spiral noddles so of course it required double or more water and more cook time but that’s expected because it wasn’t angel hair. Otherwise cooked as is and was delicious, even more so than the boxed stuff.

I often run out of cream, has anyone tried this with 2% or whole milk?
I have only made this as written. You can try it. Without the extra fat from the heavy cream, it might not thicken us as intended.
Any ideas on how would I be able to use this with rice noodles? Thanks in advance.

I have had to do GF for someone with the rice a roni. I add rice noodles and I fount it took a little longer.

This is just what I’ve been looking for! I love mixing up a main dish with different sides, and this is just what I needed. So good, and could go with so many things. The boyfriend also approved!

Could you make this with leftover cooked pasta?
So you don’t drain the pasta before adding the cream and cheese. It just seems like it would be to liquidy.
You don’t drain the pasta. I absorbs the liquid as it cooks.
What other pasta works? Out of angel hair.

I've made this at least a dozen times, it's my favorite pasta side! I was thinking of trying it with a tri-color rotini instead of angel hair. What do you think?

This is absolutely delicious and one of my husband's favorite side dishes! It's great to make your own so that you can control the amount of salt that goes into a recipe. The only change I make is to use freshly grated parmesan cheese. That green can stuff is full of preservatives and sawdust!
How many servings would you say this is? Trying to figure out if I should half it or not.
