Chocolate Cherry Cake

Chocolate Cherry Cake - doctored up cake mix with cherry pie filling and almond extract. Topped with a quick homemade chocolate frosting. This cake is requested for birthday's and potlucks! SO good!

I've made this cake several times, most recently at our #TwitterSupperClub dinner. It was a huge hit!  The cake is super moist and super easy to make. It starts with a box of cake mix and a can of cherry pie filling. It is similar to a Texas Sheet Cake, but with cherries. I used a hand mixer to mix the cake so some of the cherries would break up. If you want whole cherries in the cake, mix the cake by hand. Either way it will be delicious. This is also great with a little whipped cream or vanilla ice cream!

  • 1 (21 oz) can cherry pie filling
  • 1 tsp almond extract
  • 2 eggs
  • 1/4 cup milk

  • Frosting
  • 1 cup sugar
  • 5 Tbsp butter

Preheat oven to 350. Grease a 9×13 inch pan. Set aside.

In a large bowl, combinecake mix, cherry pie filling, almond extract, eggs and milk. Mix with an electric mixer just until combined. If you want whole cherries in the cake, mix batter by hand.

Pour batter into prepared pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool.

For the frosting: In a small saucepan, combine sugar, butter, and milk. Bring to a boil. Continue boiling for 2 minutes, stirring constantly. Remove pan from heat and stir in chocolate chips until smooth. Immediately pour over cooled cake.

  3. I have eaten this but it looked different. Your cherries look like candied cherries. What brand did you use? Thanks for the recipe.

  5. I had this cake for my church party on Sat. night and made it the next day for Valentine's Day. Best Chocolate cake I have ever had. So yummy. I put red sugar on top of the frosting for the special day and it was crunchy and good with the red sugar on it. Brought in leftovers for my coworkers and anxious to see what they say about it.
